Potential candidates must be willing to learn and work well in a high-stress environment and exhibit strong stress management skills and techniques. Sous Chef must be a team player, goal-oriented, motivated and alert, willing to follow directions, and able to maintain a positive attitude before, during, and after service. A Sous Chef must be the next leader in line in the kitchen and lead the crew when the Chef is not available. Sous Chef must act as quality control, ensuring customer satisfaction through training employees properly and adhering to company policy. At Proper we operate as one whole team, both the front and the back of the house are expected to work together and get along.

Duties include but are not limited to:

  • Ability to read recipes well and prep efficiently
  • Open/close the kitchen with the staff
  • Keep the kitchen staff task-oriented throughout the day
  • Maintain a positive working environment
  • Display adequate and precise knife skills
  • Teach and lead the line cooks in all facets of the kitchen and kitchen operations
  • Be willing to pick up, fill in, and work any shift necessary due to illness, emergency, or accident within the general kitchen staff
  • If opening, dis-arm the alarm and put away food orders accurately
  • Learn how to do the food ordering through all purveyors
  • Reporting any issues that arise during the shift to the shift leads management
  • Record temperatures of freezers and coolers daily
  • Ensuring compliance with company policies, health, and safety standards
  • Continuing knowledge by participating in staff training opportunities
  • Enhancing Proper’s reputation by accepting ownership for accomplishing new and different request
  • Leading by example at all times
  • Encouraging, assisting, leading, and disciplining staff when necessary
