The Big Springs Lodge offers a variety of breakfast and lunch options from grilled-to-order burgers, fresh Entrées, made-to-order salads, Pizza, Mexican, an on Mountain Food Truck and more!  This location also has multiple full bars and food is served both indoor and outdoor at this mid-mountain location with a perfect atmosphere for snow enthusiasts and summer thrill seekers.

 

Responsibilities include, but are not limited to:

  • Responsible for the oversight of all Food operations of Big Springs Lodge
  • Expected to be a “hands-on” Leader who motivates their team by example
  • Is a role model and advocate for the company mission and core values
  • Ensures staffing levels, grooming standards and guest service levels are executed at a high level
  • Assigning daily team duties, breaks and adjusting schedules as needed
  • Ensures all communication, standards, policies and expectations are communicated to their team and then executed flawlessly
  • Responsible for accuracy in daily & monthly inventories and requisitions
  • Ensures proper labor management though scheduling and cost control
  • Ability to maintain the teams and his/her own composure during peak operating periods
  • Has a defined plan to complete company leadership training
  • Ensures all kitchen staff are trained and training is documented for use of all equipment
  • Communicates with purchasing to ensure successful coordination of requisitioning, return to stocks, including variances, spoilage and excess inventories
  • Ensures recipes are constantly updated to reflect changes created by availability of product or direction from Mountain Dining Executive Chef
  • Maintain all Health and Safety requirements of Lodge Operations including but not limited to: temperature logs, waste sheets, compost tracking, training documents and health permits

     

    Qualifications: 

  • High school diploma or general education degree (GED) preferred but not required.
  • Valid CA Food Handlers Card is required.
  • Be able to lift 11-25 lbs on a regular basis.
  • Must be able to stand for extended periods of time at work station.
  • Be able to work variable hours as needed including weekends and holidays.
