Sanitation Specialist Production Setup /Start-up Person

DUTIES AND RESPONSIBILITIES

Verify that each piece of equipment has been properly cleaned and sanitized per the written SSOP’s and signed off on the Master Sanitation Schedules.

Assemble all needed production equipment in a sanitary manner.

Assist with manual cleaning, CIP, and any other duties as assigned to prepare the production line to run.

VITALINE START UP

-VERIFY ALL PACKAGING MATERIAL (WRAP, TAPES, FLAVOR ETC.).

-VERIFY MIX HOLDING TANKS AND THAT ALL CONNECTIONS ARE TIGHT AND PROPERLY ROUTED.

-FLUSH ALL LINES WITH SANITIZER FROM FLAVOR TANKS THROUGH FREEZERS TO FILLER.

-TRANSFER BRINE TO VITALINE FROM HOLDING TANK TO APPROPRIATE LEVEL AND THEN SWING VALVES TO ALLOW BRINE CIRCULATION THRU LINE AND PLATE AND FRAME HEAT EXCHANGER. CHECK BRINE SPECIFIC GRAVITY (SPG) 1.300 IS THE IDEAL STRENGTH. (ADJUSTMENTS MIGHT BE NEEDED). MAINTENANCE WILL TURN ON AMMONIA WHEN BRINE SPG IS VERIFIED.

-START UP VITALINE.

-DRY OFF ANY WATER ACCUMILATION LEFTOVER FROM SANITATION ON FILLER AND OVERHEAD SHIELD.

-CHECK STORMAX. DRY OFF AND CLEAN OUT AS NEEDED.

-SET UP WRAP STATION AND TURN IT ON ALONG WITH THE STACKER TO ENSURE THERE ARE NO ISSUES.

-TURN ON HEAT SEALERS AND FINS. IF RUNNING PRE-DIP TURN ON HOLDING TANK HEATER.

-SET UP PRE-DIP DRUM AND TANK.

-SET UP CRUNCH INJECTORS AND FILL CRUNCH DISPENSING TANK.

-SET UP ALL TAPES AS NEEDED.

-SET UP PACKAGING FOR PACKERS.

-SET UP FLAVOR TANKS.

-START ALL CONVEYOR BELTS.

-CLEAR OUT AND RESET CASE COUNTER.

-START RECIRCULATION OF MIX THRU FREEZER. OPEN AMMONIA VALVE AND WAIT TILL DESIRED TEMPERATURE IS REACHED.

-TEMPERATURE IS REACHED PRODUCTION CAN BEGIN.

SOFTSIDE SET UP

-VERIFY PACKAGING FOR JOB. BOXES, FLAVOR, TAPES ETC.

-VERIFY AND INSPECT MIX HOLDING TANK(S). CHECK PUMPS, VALVES, GASKETS, AND TEMPERATURE GAUGE. CORRECT ANY LEAKS IDENTIFIED.

-VERIFY MACHINE MOLDS ARE IN ACCORDANCE WITH ALLOCATED JOB. IF NOT, MOLDS NEED TO BE SWITCHED OVER TO CORRECT ONES.

-SET UP TAPE MACHINE(S).

-SET UP CONVEYOR BELT AND METAL DETECTOR.

-SET UP PACKAGING FOR PACKERS.

-RUN SANITIZER THRU LINES, PUMPS, FLAVOR TANK(S), INGREDIENT FEEDER (IF IN USE) AND FREEZER TO FILLER.

-TRANSFER MIX FROM HOLDING TANK(S) INTO FLAVOR TANK(S). ADD FLAVOR AND COLORING AS NEEDED. ENSURE AMMONIA VALVE(S) IS OPEN AND AGITATOR(S) IS ON.

-SET UP PREDIP PUMP AND HOLDING TANK. (IF IN USE).

-SET UP THE INGREDIENT FEEDER. (IF IN USE).

-SET UP THE MACHINE WITH LIDS AND CUPS/CONES/TUBES.

-PERFORM A DRY RUN WHILE INSPECTING ENTIRE MACHINE FOR ANY FAULTS. VERIFY HEATERS REACH TEMPERATURE.

-TURN ON THE FREEZER AND OPEN AMMONIA VALVE.

-RECIRCULATE MIX IN AND OUT OF FLAVOR TANKS UNTIL TEMPERATURE IS UP TO SPEC.

-ONCE TEMPERATURE IS ACHIEVED OPERATOR CAN COMMENCE START UP.

SANDWICH STARTUP

-VERIFY ALL PACKAGING FOR JOB. (WRAP, BOXES, FLAVOR ETC.).

-VERIFY AND INSPECT MIX HOLDING TANK(S). CHECK ALL LINE CONNECTIONS, VALVES, PUMP(S) AND TEMP GAUGE.

-RUN SANITIZER THRU LINES, FLAVOR TANK AND FREEZER TO THE FILLER.

-SET UP CONVEYOR BELT AND METAL DETECTOR.

-SET UP TAPE MACHINE.

-SET UP PACKAGING FOR PACKERS.

-VERIFY INNER CARTON ERECTOR IS POSITIONED IN ACCORDANCE WITH JOB REQUIREMENT. (EXAMPLE-RETAIL JOBS AS COMPARED TO 24PK GRANDE).

-TRANSFER MIX FROM HOLDING TANK TO FLAVOR TANK. ADD REQUIRED FLAVOR AND ENSURE AGITATOR IS ON.

-OPEN AMMONIA VALVE TO FREEZER.

-LET MIX RECIRCULATE THRU THE FREEZER FROM THE FLAVOR TANK UNTIL THE DESIRED TEMPERATURE IS REACHED.

OTHER TASKS:

-ONCE TEMPERATURE IS WITHIN SPEC THE OPERATOR CAN START UP THE PROCESS.

• Assist in the packing and handling of ingredients and supplies in the production process.
• Assist in training set-up employees and or machine operators.
• Make necessary adjustments to the machines during operation.
• Record production and downtime information on the proper forms according to standard operating procedures.
• Observe gauges and thermometers to determine if the product is being manufactured according to specs.
• Produce quality products according to specifications.
• Give directions to packers on equipment being operated.
• Observe and listen to equipment to detect possible malfunctions.
• Where necessary, assist maintenance personnel in the maintenance and repairs of equipment.
• Performs assigned maintenance duties on production equipment.
• Knowledgeable in GMP and GSP necessary in food operations.

• Good ability in mathematics, legible handwriting, and good verbal communication skills.
• Must be physically capable of lifting and manually moving product weighing up to 50 lbs.
• Ability to follow all house and safety rules, Standards of Operations, and Procedures.
• Problem-solving skills.
• Strong mechanical skills.
• Experience with food manufacturing.

EDUCATION:
High School diploma or general education degree (GED); or related experience and/or training; or equivalent combination of education and experience.
