Pastry Sous Chef

At Alyeska Resort, our Pastry Sous Chef is a leader on our pastry team responsible for taking their extensive knowledge of baking/pastry-making techniques and creating artistic desserts. The ideal candidate has experience in a scratch kitchen with a wealth of artistic vision and strong foundation in sanitation principles and food preparation standards. We will rely on this role to bring strong leadership skills and excellent communication skills. They should also be enthusiastic about teamwork. Being a team player is a must!

Main Duties:

  • Prepares pastry and dessert items in accordance with standards established by the Pastry Chef.
  • Ability to Create/cook desserts, pastries, and baked goods
  • Prepare dough and batter for pastries and cakes.
  • Prepare specialty pastry items and sauces.
  • Decoration of cakes and ice cream desserts.
  • Ensure quality, consistency, and cleanliness of kitchen operation;
  • Ensure kitchen equipment is clean and in proper working condition;
  • Requisition supplies and food items within assigned work area; make certain all requisitions are processed properly and placed in designated areas.
  • Assist in conducting inventory regularly to ensure proper cost control
  • Check refrigerators to prevent contamination and waste; ensure all products are rotated on a first-in, first-out philosophy.
  • Ability to organize daily workload in preparing recipes according to an exisitng menu
  • Assist the Executive Pastry Chef, other Pastry Chefs, Bakers, and Helpers as needed in execution of production.
  • Creativity and artistic flair a plus.
  • Other duties as assigned.

Skills/Requirements:

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required. 

  • Work weekends & holidays on a flexible schedule
  • Must have or be able to obtain within the introductory period, the following:  ServSafe certification
  • High School degree or equivalent; and five years related experience and/or training
  • Culinary apprenticeship or other formal training preferred
  • 1-2 prior hotel/restaurant pastry experience preferred
  • Thorough knowledge of basic dessert and pastry techniques
  • Good basic knowledge of cakes, tarts, fillings, icings, sauces, and dessert assembly
  • Good working knowledge of operating all kitchen equipment and of accepted standards of sanitation
  • Must be flexible. Must work well with others, and work well under pressure
  • Good manual dexterity for operating kitchen equipment necessary. Must be able to grasp, lift and carry up to 75 lbs. and push/pull up to 200 lbs
