Essential Functions:

The Prep & Food Truck lead position oversees and leads prep for the back of the house, catering/events & food truck according to Grace Meat + Three policy, procedures & federal/state regulations. The prep lead ensures that food quality, safety standards and client expectations are satisfactorily met.

  • Maintaining Prep of Full Menu & Catering Items
  • Ensures Quality & Consistency of Product
  • Focuses on minimizing waste and avoiding product shortages.
  • Uses approved food recipes and production standards to ensure proper quality, serving temperatures and standard portion control.
  • Establishes Pars and Prep Items
  • Maintaining Reasonable Ticket Times
  • Maintaining Proper Care & Cleanliness of Kitchen Equipment & Prep Spaces
  • Nurturing a Positive Work Environment
  • Ensure that all Side work Sheets are adhered to and properly executed in opening and closing procedures
  • Receive and check orders as they come in.
  • Collaborate with Chef to help prepare specials & menu changes
Food Truck
  • Prepare all food for off premise Food Truck Events
  • Oversee the operations on food truck
  • Ensure employees follow proper sanitation procedures
  • Preside over food truck employees, including cooks, cashiers, and other employees
  • Ensure food safety standards are maintained while food is being cooked
  • Prepare and serve food
  • Respond to customer requests, and inquiries
  • Maintain equipment including refrigerator, cookware and preparation/inventory spaces
  • Ensure customer dining experience is satisfactory
  • Train employees
  • Cleaning of the truck & maintaining equipment

Knowledge & Skills

  • Ability to be organized and have strong time management skills
  • Ability to communicate, support and lead others with a positive and professional manner.
  • Must demonstrate skills in multi-tasking and problem solving in high pressure situations

  • Work with a sense of urgency, move with a purpose and work efficiently
  • Show initiative and anticipate what needs to be done
  • Ability to stand on feet for extended periods of time
  • Ability to carry and lift up to 50 lbs at times
  • Follow proper uniform procedures. Monitor appearance and attitude to a professional manner

Experience:

  • 2+ Years of Line Cooking or Kitchen Experience
  • High School Diploma
  • Missouri SERV Safe Certification
