DESCRIPTION
As a key member of the operations team, the Beverage Training & Operations Manager will engage with Senior Leadership, Restaurant Management, Bartenders and other Store Level Employees to oversee the beverage program and ensure consistent beverage service standards through fostering a collaborative partnership with restaurant operations. The position encompasses all aspects of beverage operations including, but not limited to, menu development, menu maintenance, drink presentation, recipe implementation, cost control, and quality control standards across multiple restaurant units. This position will also actively engage in new restaurant openings and hourly staff training.

As the Beverage Training & Operations Manager you will...                                                                                                                                                                          
Product Knowledge

  • Fully understand and embody the Sally’s Apizza culture and historical evolution of the brand.
  • Conduct regular tastings and educational sessions to deepen staff understanding of various beverages, including wines, cocktails and non-alcoholic options.
Operational Excellence
  • Be responsible for beverage and bartender operations as we scale from one unit to multiple units across the Northeast region.
  • Streamline and enhance beverage service operations to ensure efficiency and effectiveness. 
  • Identify, analyze, and re-align inconsistencies and variances in real-time. 
  • Align recipe costs that meet the company's operating goals early in the development process.
  • Implement standard operating procedures for prep, production, cleaning schedules, and workflow.
  • Partner with General Managers to oversee store level beverage and bartender operations to meet budgeted goals while improving operational execution, beverage quality, profitability, and reducing waste.
  • Have the operational flexibility to be scheduled at any location in the region.
  • Maintain and evaluate bar resources, equipment, and supplies at each location.
Collaboration with Stakeholders
  • Communicate operational updates with Senior Leadership daily.
  • Work closely with Senior Leadership to develop drink menus. This will include adding proprietary/signature items as well as updating old or under-performing items.
  • Support restaurant operations by being an active member of the restaurant level management schedules.
  • Steer the direction of the beverage program by conducting quarterly tastings with Senior Leadership.
  • Create and oversee a monthly beverage committee meeting.
Training Program Development
  • Implement existing training programs in an effective manner for all beverage related positions, including bartenders, servers and support staff.
  • Train for accuracy of beverage inventory levels, ordering and rotation to minimize waste and optimize cost control.
  • Continuously update training materials to reflect industry trends, new products, and service standards.
  • Stay abreast of industry trends and updates to enhance training content and keep staff informed.
  • Train TIPS courses
Staff Development
  • Mentor, teach, and train Floor Managers and hourly line staff to perform at a high level and exceed expectations while building relationships with employees that foster loyalty and teamwork.
  • Actively participate in staff performance reviews.
Quality Control, Compliance and Safety
  • Perform store-level “spot checks” to ensure consistency, accountability, quality, and food safety standards are being met and communicated to store-level leadership in a timely manner.
This role reports to the Director of Operations and Supervises the Bar Team Members.

JOB REQUIREMENTS:

Technical:  Strong Computer Skills (Microsoft Office, Brink POS preferred), Ability to do
theoretical beverage costing. Ability to forecast revenue, purchasing, and labor.
Language: English, Basic Spanish (preferred but not required)
Experience:
  • A minimum of 3 years of proven success as a beverage leader in a full-service restaurant setting.
  • A background including extensive bar experience along with a demonstrated desire to stay on top of current beverage trends and deliver impeccable hospitality.
  • Comprehensive understanding of effectively writing and communicating recipes.
  • Must possess a strong financial acumen, command of a P&L, and the ability to effectively interpret reporting.
Certifications: ServeSafe Certified, Become TIPS Trainer certified within 6 months of hire, Basic Allergy and Choke Training Certified
Work Environment: This is a hands-on position that requires 60% of the work week to be spent actively engaged in service and 40% spent on administrative duties. Must be able to work on your feet for up to 10 hours at a time and can lift up to 50lbs. Must be able to travel within your region daily for up to 50% of the time between locations, which may include 10% outside of your area with overnight stay.

Anticipated Schedule:
    • Off Sunday & Monday
    • Tuesday-Thursday (11am-9pm)
    • Friday & Saturday (12pm-10pm)
