Job Description
We consider ourselves very lucky that our hard work has built a great team of hardworking, energetic, and passionate staff who are extremely reliable. Unfortunately, one of our most passionate employees that has led and inspired not only fellow workers; but guests as well, has retired... and we are looking to fill some very big shoes.
We are not looking for you to replace every trait, so do not feel afraid to apply. As a matter of fact, he has offered to assist our staff at any time... and remain a great friend of the business as well as a personal friend!
I will describe the person we have lost:
Unbelievable personality... a friend of mine who spent his career all over the world conducting very high end negotiations, was dining in our establishment soon after our servers arrival, and stopped in mid sentence during our conversation to ask me where I found that particular server (the amazing thing is that it wasn't even his server!)
40 years of fine dining service, catering, and an incredible passion for food were always present in every conversation.
He remembered guests birthdays, guests remembered his birthday, and many celebrations were spent together in our restaurant because of this!
As for for his service; it was impeccable and brilliant. The most important part of the job description was the smallest component of his skill set - actual serving. The wealth of knowledge was incredible: the difference between grapes in any region in the planet; a full knowledge of every piece of flatware, glassware, and china that was ever invented and when it should be used; and most importantly, how to read guests.
Sidework wasn't a chore, it was essential in the same way breathing and eating aren't chores... it was done with the a respect that is not often seen; and so was it with anyone in the building.
We could go on and on about the things accomplished (writing schedules, knowing in advance when a server was graduating and having a trained replacement ready to go... but I am sure you get the picture.
The good news is, we do not need all of these attributes (as long as passion and integrity are present)!
