Breakfast Chef-Seasonal Position from mid-April to end of October

Location: Boothbay Harbor, Mid-coast Maine

Embrace the charm of Boothbay Harbor at The Topside Inn as our Breakfast Chef. Collaborate with the Owners/F&B Team and General Manager to elevate our breakfast experience. Our Bar has great potential for growth with a small bites menu that is currently in development.

Responsibilities include kitchen management, breakfast preparation, creating afternoon treats, expanding small bites bar menu, and maintaining high standards

Compensation:

$22 - $24

Responsibilities:
  • Ensure that prep for every meal is done accurately and efficiently, is consistent with business demands, and communicate any menu changes to the GM, or, in their absence, the Manager on duty, in a timely and effective manner
  • Create and execute additional small plate bar menu items to complement our craft cocktails and our comfortable bar and porch seating areas
  • Take initiative in organization
  • Maintain consistent communication with the GM to ensure awareness of house counts, guest dietary requests, business levels, scheduled groups and activities, and guests’ special needs and requests
  • Manage the preparation of menu items consistent with the recipes and standards provided by the F&B Management team
  • Have a working knowledge of common food allergies and controls for cross-contamination issues
  • Assist in performing general maintenance and upkeep of all kitchen equipment, reporting any deficiencies to the GM 
  • Ensure all products are always on hand and within agreed cost controls. Perform daily checks, weekly and monthly inventories with accurate and updated pricing
  • Responsible for counting accurately opening and closing inventory or service supplies
  • Safely operate kitchen equipment including, but not limited to, ovens, stoves, dishwashers, slicers, steamers, mixers, and chef’s knives
  • Protect the assets of Topside Inn and Lark Hotels
  • Positively represent our brand
Qualifications:
  • Personable and proactive with guests
  • Ability to lift and carry up to 50 pounds between knee and shoulder
  • Walking, bending, and standing 100% of the shift
  • Frequent stooping, reaching, pushing, lifting, manual dexterity, and repetitive motions
  • May require the ability to work on uneven outdoor surfaces
  • Ability to work in extreme temperature conditions both indoors and out.
  • Schedule varies according to operational needs; will include early mornings, evenings, weekends, and holidays
  • Frequent hand-washing
  • Hazards include but are not limited to COVID-19, stress, cuts from knives and slicers, burns, exposure to raw products, use of cleaning chemicals, slips, and tripping
  • Travel required
  • Must be eligible to work in the United States of America
  • ServSafe or similar certification preferred
  • Must have a positive work ethic, be a strong team player, and work for the greater good of the Topside Inn and Lark Hotels
  • Ability to understand verbal directions, as well as written menus, recipes, labels on foods and chemicals, and other workplace safety signage
  • Ability to work under pressure and deal with stressful situations during busy periods, demonstrating positive leadership.
