Scope : Coordinate activities of Olivia's Bistro serving food and beverages. Direct and participate in the preparation, seasoning, and cooking of salads, soups, fish, meats, vegetables, desserts, or other foods. Maintain recipe cost cards supporting owner approved menu item prices, order supplies, and keep records and accounts. Directly supervise and coordinate activities of workers engaged in preparing and serving food, and sanitation Direct Report: Owner Reviewer: other Owner Typical shifts: 6 days per week 10-11 hours per day split shift Start: 1 May 2018 Stop: 30 Sep 2018 Results (reviewed weekly) • Operation achieves budgeted financial and operational goals • Customers enjoy a clean and peaceful environment, and are served well made and wholesome foods • Employees feel respected and contribute to the success of Historic Skagway Inn Production • Working position involves prepping, cooking, and sometimes serving • Participate and monitor food preparation methods, portion sizes, and garnishing and presentation of food to ensure that food is prepared and presented based on owner approved menu specifications • Coordinate with Innkeeper on Breakfast planning and counts • Coordinate with Gardener for utilization of garden items as available. Sanitation • Supervise and participate in kitchen and dining area cleaning activities. • Monitor compliance with safety, health and fire regulations regarding food preparation, serving, and building maintenance. • Check the quality of raw or cooked food products to ensure that sanitation standards are met. • Monitor sanitation practices to ensure that employees follow standards and regulations. Customer Service • Investigate and resolve complaints regarding food quality, service, or accommodations. • Resolve customer complaints regarding food service. • Prepare responses (through owner) to social media comments (i.e. TripAdvisor, Yelp etc.) Employment Type: Temp/Seasonal Years Experience: 3 - 5 years Salary: $17 - $25 Hourly Bonus/Commission: No
