Position Summary: Process Oven Operator is responsible for maintaining quality checks and documentation of oven control. Insuring all product checks and testing are preformed to specifications. Loading and unloading of ovens as needed.



Essential Functions and Related Responsibilities:


  • Communicate with the departing shift to determine products and oven in use and any necessary information.
  • Visually inspect area and for any safety issues or conditions and report to supervisor immediately.
  • Communicate with Supervisor for product production schedule.
  • Load and unload products from ovens as needed.
  • Label each rack of product and make sure label stays with rack of product as rack is moved through oven cycle and transferred to dumping personnel.
  • Maintain oven temperatures between 165˚F and 175˚F to kill bacteria on meats.
  • Monitor Temperature settings using chart recorder. Date, initial, oven number, turn into quality personnel for review.
  • Record contents of Oven on Oven Control Sheet on each oven door.
  • Individual ovens contain products of similar shape and thickness.
  • Measure water activity (Aw) and moisture. And record
  • Avoid cross-contamination.
  • Practice all safety and GMP policies.
  • Organize and keep product and ovens in order.
  • Remove trash and general housekeeping.
  • Insure all quality checks and testing documentation is accurate and complete.
  • Communicate with oncoming shift product and oven status before shift change.

  • Must be detailed oriented
  • Must be 18 years of age

  • Education/Experience:

High school diploma or general education degree (GED); or

one to three months related experience and/or training; or

equivalent combination of education and experience.


  • Language Ability:

Ability to read and interpret documents such as safety rules, operating and maintenance instructions, and procedure manuals.

Ability to write routine reports and correspondence.

Ability to speak effectively before groups of customers or employees of organization.


  • Math Ability:

Ability to add, subtract, multiply, and divide in all units of measure, using whole numbers, common fractions, and decimals.

Ability to compute rate, ratio, and percent and to draw and interpret bar graphs.


  • Reasoning Ability:

Ability to solve practical problems and deal with a variety of concrete variables in situations where only limited standardization exists.

Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form.
