Food Service Manager – Catering

Full Time

Under general supervision, coordinates and manages all daily aspects of the Catering operations. Supervises subordinate catering personnel in the maintenance of facilities, guest services, and labor control. Monitors and maintains excellent food and beverage quality, sanitation standards, and overall guest services. Reports to the Senior Catering Manager. This position is exempt under the Fair Labor Standards Act and requires time worked in excess of forty hours per week.

ESSENTIAL JOB FUNCTIONS

  • Responsible for ordering and inventory control of alcoholic beverages.
  • Assists in preparing and implementing an operating budget for the catering department including labor and beverage budgets.
  • Maintains department profitability goals.
  • Monitors expenditures; plans and implements department purchases to attain catering readiness and Zoo goals and objectives.
  • Interviews, hires, and develops staff for the catering department.
  • Assists in developing, implementing catering and beverage menus, and programs for catering operation, ensuring accordance with Zoo goals and objectives.
  • Supervises and directs activities and operations of catering employees which involves instructing; assigning and reviewing work; planning; maintaining standards; coordinating activities; allocating personnel; acting on employee problems; selecting new employees; and recommending transfers, promotions, disciplinary actions, discharges and salary increases.
  • Oversees and aids department staff throughout execution, preparation, and set up of all events.
  • Reviews event needs to ensure adequate staffing, communicates staffing needs to Coordinator.
  • Purchases and maintains needed products and supplies necessary to events and programs.
  • Interacts and coordinates with other Zoo departments in order to solicit, plan and implement catering events and provide support for other activities, special events and programs as needed.
  • Communicates in writing regarding events to Zoo staff and departments.
  • Maintains catering facilities in accordance with state, federal and local policies and laws as well as Toledo Zoo policies and procedures.
  • Provides telephone and written correspondence required for selling and arranging catered events including the distribution of tickets and confirmation letters.
  • Places orders for out sourced event needs such as flowers, entertainment and rented items and equipment.
  • Supervises and coordinates cleaning of all areas impacted by catering events.
  • Coordinates bookings of assigned rooms and picnic facilities and maintains appropriate scheduling records.
  • Receives, reviews, and processes an assortment of reports and records including checks, operating reports, billing invoices, liquor licenses, certificate of insurance, transfers, time cards, job applications, marketing materials, menus, inventory records, etc.
  • Prepares and processes various documents and reports including weekly event forms, billing statements, transfers, purchase orders, purchase requisitions, labor reports, event bookings, training manuals, food orders, maintenance requests, check requests, expense reports, employee schedules, transfer forms, employee evaluations, job descriptions, etc.
  • Interacts and communicates with various individuals and groups including sales representatives, Zoo Director, various department heads, potential clients, clients, employees, supervisor, event planners, committee members, restaurant owners, business owners, hotel sales representatives, etc.
  • Utilizes various types of equipment and machinery including electric cart, computer, oven, food processor, slide projector, gas grills, typewriters, coffee maker, vacuum sweeper, sound equipment, photocopier, beverage machines, walkie‑talkie, office supplies, cooking utensils, audio‑visual equipment, etc.

ADDITIONAL JOB FUNCTIONS

  • Provides all needed reports and research as directed.
  • Performs other related duties as required.

MINIMUM TRAINING AND EXPERIENCE

  • Prefer a degree in a Culinary or Hospitality program.
  • Minimum of five years of experience in a similar capacity.
  • A combination of education and experience may be considered to provide the necessary knowledge to fill the position.
  • Supervisory experience necessary.
  • Must have a valid drivers’ license and be insurable by the fleet insurance carrier.
