Primary mission:

To ensure proper service from the front line through quality control, training of line cooks and ensures proper sanitation levels. Coordinate, plan and supervise the production, plating and presentation of the food in a cost effective, safe manner to meet/exceed customer expectations and attract future business.

SCOPE OF WORK + TEAM
  • Reports to Executive Chef/ Director of Food & Beverage
  • Supports Food & Beverage department
  • Part of the special events team and catering


RESPONSIBILITIES
  • Supervise the daily production of food; control food and labor costs, ensure preparation, plating and presentation standards are maintained, the appropriate quantity of food is prepared and safety standards and regulations are followed to provide top quality food.
  • Supervise kitchen associates and servers: train, develop, empower, coach and counsel, resolve problems, provide open communication, recommend and conduct performance and salary reviews, recommend discipline, as appropriate.
  • Supervise the cooks and cold prep person's food production on the front line; check all items against the recipe cards, verify that use records are followed for all items served and that food is presented in an efficient, quality manner.
  • Monitor the line set up prior to all meal functions to ensure maximum efficiency during meal periods.
  • Monitor and control the maintenance/sanitation of the kitchen, restaurant and equipment to ensure a healthy, safe work environment which meets/exceeds federal, state, corporate and franchise standards and regulations.
  • Assist in the creation and planning of menus and implement changes to continue to attract business.
  • Monitors to ensure proper receiving, storage (including temperature-setting) and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating, and placing items in proper containers to ensure product freshness.
  • Checks to see that all equipment in the kitchen is clean and in proper working condition and write work tickets for any equipment in need of repair.
  • Schedules culinary staff so that proper coverage is maintained while keeping payroll costs in line.
  • Develop and prepare departmental schedules, job descriptions and Manage daily payroll and attendance controls.
  • Execute and promote the Accident Prevention Program to minimize liabilities and related expenses.


Qualifications

EXPERIENCE:
  • Prior Experience:
    • 5+ years of employment in a related position with this company or other organization(s).
  • IT Expertise:
    • Advanced knowledge of computer software (including Microsoft Office, outlook) and web analytics tools is preferred.
  • Education:
    • More than two years of post-high school education; culinary, sales and service background required. College degree in related field preferred.
  • Subject Expertise:
    • Demonstrate a working knowledge of all property safety and security procedures as required maintaining a secure and safe environment for employees as well as guests.
    • Report any unusual occurrences and/or request to Supervisor.
    • Read and abide by all the regulations and rules of conduct stated in the Associate Handbook.
    • Must be service oriented with excellent customer service and sales skills
    • Must be able to effectively communicate to guests, management, and coworkers and read, write and understand the English language
    • Must be energetic and outgoing
    • Must possess excellent interpersonal and organizational skills
    • Must be able to follow directions with attention to detail, speed and accuracy
    • Must be a team player with the ability to work under minimal supervision
    • Must be able to multi-task in a fast-paced work environment
    • Must be able to understand and work with basic financial information and solve basic arithmetic problems
    • Must be able to type 45 wpm and have the ability to input data and access information on the computer
    • Must have proficient working knowledge of Microsoft Office, Opera; preferred.
    • Must be able to exercise confidentiality and discretion.

OTHER EXPECTATIONS:
  • Abide by payroll policies, procedures and rules of conduct as stated in the Springboard Hospitality Associate Handbook.
  • Demonstrate a working knowledge of all company safety and security procedures.
  • Travel required: As needed for hotel familiarization, content creation shoots and to meet with colleagues.
  • Hours Required: Must primarily work during Springboard Hospitality business hours, Monday - Friday 8am - 5pm (PST), while understanding that the hotel business functions 24/7 and some weekend or holiday work may occasionally be required.
