Proper Hospitality is seeking a Sous Chef at Montauk Yacht Club, a 107-room luxury property set to debut within The Collective. Spanning 35 acres on Montauk's Star Island, Montauk Yacht Club offers waterfront views, a private beach, three pools, multiple dining options and over 200 wet slips that can accommodate boats from small day cruisers to 300-foot superyachts. Holding eight decades of East End history as an elite social club and thoughtfully reborn for the modern traveler, guests can expect classic East Coast architecture, well-appointed interiors and detail-driven amenities.

As the Sous Chef, you will play a crucial role in the daily operations of our kitchen. You will work closely with the Executive Chef to lead a team of culinary professionals in delivering a culinary experience that exceeds our guests' expectations. Your expertise in culinary techniques, creative flair and attention to detail will be essential in maintaining the high standards of our hotel's dining offerings.

Job Overview

* Ensure that all food and products are consistently prepared and served according to the restaurant's recipes, portioning, cooking and serving standards

* Assist in overseeing inventory, purchasing and food cost

* Manage staffing levels to ensure that guest service, operational needs and financial objectives are met

* Ensure compliance with food handlers and sanitation standards

* Maintain complete knowledge of and comply with all departmental policies, procedures, and brand standards

* Support the Chef de Cuisine in the training, mentoring, development and management of the kitchen staff and supervise/coordinate all related culinary activities

* Assist with completing daily, weekly, and monthly management administrative duties including operations reports, financial documentation, human resources/staff management paperwork, standard operating procedures, safety and sanitations checklists, and ordering and inventory documentation

Qualifications

* 3 years' experience in a similar position

* Culinary Degree or equivalent experience

* Experience successfully leading in a fast-paced environment and prioritizing demands

* Excellent critical thinking and decision-making skills

* Able to work a flexible schedule, including evenings, weekends and holidays
