- Assist in controlling food cost by meeting or decreasing COGS %
- Assist in controlling labor cost by meeting or decreasing labor %
- Lead BOH Team through daily production and flow of food practices
- Manage BOH Team in absence of Restaurant chef
- Assist in keeping recipe book current and up to date
- Maintain and assign weekly cleaning duties to BOH Team
- Take on Head Chef responsibilities including but not limited to ordering in the absence of the Head Chef.
- Take on opening and closing MOD responsibility as needed
- Maintain safety & sanitation standards, exceed goals on all inspections with no critical violations
- Exceed guest expectations of hospitality
- Maintain professional and technical knowledge by tracking emerging trends, attending trade events, reviewing professional publications, and establishing personal and professional networks. And then, pass the knowledge on to the BOH Team.
