Lake Mohawk Golf Club, is looking for 1 full time line cook to join our 96 person strong team. We are located on 471 West Shore Trail in Sparta, NJ. Our ideal candidate has culinary skills, attention to detail, and the ability to work efficiently under pressure. This will play a key role in delivering high-quality dining experiences. As a line cook, you will be responsible for preparing and cooking food items according to recipes and menu specifications. Working on the "line" alongside other kitchen staff during service, you will contribute to ensuring the timely and consistent execution of dishes to meet the demands of our guests.

A line cook is responsible for preparing, cooking, and plating food items according to recipes and restaurant standards. They work on the "line," which is the area of the kitchen where food is cooked and assembled for service. Line cooks play a critical role in ensuring that dishes are prepared accurately, efficiently, and consistently to meet guest expectations.

Responsibilities:

  1. Food Preparation:
  • Prepare ingredients for cooking, including chopping vegetables, portioning meats, and measuring seasonings, according to recipe specifications.
  • Set up and organize workstations with necessary ingredients, tools, and equipment for efficient food production during service.
  • Follow standardized recipes and cooking techniques to ensure consistency and quality in food preparation.
  • Coordinate with other kitchen staff, such as sous chefs and expeditors, to prioritize orders and maintain timely service during peak hours.
  1. Cooking and Assembly:
  • Cook food items on the line, including proteins, vegetables, starches, and sauces, using appropriate cooking methods such as grilling, sautéing, frying, or baking.
  • Monitor food temperatures and cooking times to ensure that all dishes are cooked to the correct degree of doneness and safety standards.
  • Plate and garnish dishes according to presentation guidelines, paying attention to portion sizes, arrangement, and visual appeal.
  • Communicate effectively with other kitchen staff to coordinate the timing of food preparation and ensure that all components of each dish are ready for service.
  1. Kitchen Organization and Cleanliness:
  • Maintain cleanliness and organization in the kitchen, including workstations, cooking equipment, and storage areas, to comply with health and sanitation standards.
  • Dispose of kitchen waste, such as food scraps and cooking oil, in designated receptacles and assist with recycling and waste management efforts.
  • Monitor and replenish inventory of ingredients, spices, and supplies to ensure that sufficient quantities are available for service.
  1. Quality Control and Food Safety:
  • Conduct quality checks on food items throughout the cooking process to ensure flavor, texture, and appearance meet restaurant standards.
  • Adhere to food safety protocols and guidelines, including proper storage, handling, and labeling of perishable and prepared foods.
  • Monitor kitchen equipment for proper functioning and report any maintenance issues or malfunctions to management promptly.
  • Follow established procedures for temperature control, food storage, and sanitation to prevent cross-contamination and foodborne illness.

Qualifications

  • Cooking experience or Back of the House experience preferred
  • Able to meet all scheduling commitments
  • Able to anticipate needs of others in the kitchen and proactively work to meet those needs
  • Strong attention to detail
