Job Summary:

The Kitchen Mechanic is responsible for all preventative maintenance and emergency repairs in all Lodge, Casa Palmero, and Beach Club kitchens.

Essential Duties & Responsibilities:

• Perform electrical and plumbing repairs.
• Maintain shop and engineering equipment in a clean, neat, and orderly way.
• Perform repairs on gas fired and electrical kitchen appliances and equipment, which includes, but not limited to, ovens, dish and glassware washers, fryers, cheese melters, steamers, walk in and reach in coolers, garbage disposals, flat top stoves, steamers, handheld and stand mixers, ice machines, slicers, food warmers, faucets and sprayers.
• Weld, solder, and braze in order to make necessary repairs.
• Ability to calibrate sensors, adjust set points, and troubleshoot units.
• Ability to troubleshoot and fix main dish machine.
• Perform steam boiler preventative maintenance and repairs on kitchen steam units.
• Read and interpret blueprints and electrical schematics.
• Repair and replace damaged plumbing systems.
• Ability to prioritize work calls by importance and handle multiple tasks simultaneously through completion.
• Ability to maintain backstock of necessary spare parts and order when needed.
• Must be able to work with a minimum amount of supervision.
• Ability to interact with guest in a professional manner that is consistent with Pebble Beach Company standards.
• Implement emergency actions as described in “Emergency Procedures Plan” and according to established department procedures.
• Comply with all Pebble Beach Company safety and health policies and procedures.

Absolutely Required Skills:

• Ability to work in a neat and orderly way, always maintaining professional appearance.
• Able to perform physical active work, including heavy lifting.
• Mechanical skills and engineering maintenance experience required.
• Knowledge of Lockout procedures important.
• Ability to perform repair, modification and preventative maintenance tasks on facilities, equipment fixtures and systems. Installs, trouble-shoots, repairs and maintains a wide variety of kitchen plumbing, mechanical and electrical systems.
• 5 years’ experience in Engineering or related fields, especially at a hotel or building complex.
• Valid California driver's license with less than 2 points.
