Kitchen Manager- Camp Bette Perot

This is a full-time position located at Camp Bette Perot in Palestine, Texas.

Summary:

The Kitchen Manager oversees a kitchen operation that serves Girl Scout campers, volunteers, families, and staff at summer camp (June & July), weekend camping (Fall, winter, and spring), and special events. This team member serves as the primary food service leader who plans menus, orders food, prepares and serves meals, supervises staff, and manages the kitchen/dining environment, with the goal of providing nutritious, appealing, and appropriate food for up to 225 plates per meal.

Schedule:

Willingness to work a flexible schedule is essential.

This position generally works:
  • Wednesday through Sunday during fall, winter, and spring.
  • Sunday through Friday during summer (shared onsite accommodations are available upon request).


Required qualifications:
  • 2+ years of professional food service experience with demonstrated ability to plan menus and manage food product orders for group meals of 100+.
  • Experience preparing a wide range of foods, using a variety of cooking techniques, and accommodating diverse dietary needs.
  • Highly organized and experience creating and managing documents for kitchen operation.


Preferred qualifications:
  • Associate's degree or training in culinary arts preferred.
  • Kitchen leadership experience preferred.
  • Experience with diverse audiences preferred.

Job summary:

Oversees kitchen operations to serve meals for leadership programs in beautiful outdoor settings! The Kitchen Manager is responsible for developing, implementing, and overseeing a robust food service operation serving Girl Scout campers, volunteers, families, and staff at summer camp, weekend camping, and special events. This team member serves as the primary food service leader who plans menus, orders food, prepares and serves meals, supervises staff, and manages the kitchen/dining environment, with the goal of providing nutritious, appealing, and appropriate food for up to 225 plates per meal. The position reports to the Camp Program Manager and is a key member of a team serving three camp properties and developing innovative, dynamic outdoor opportunities for girls in grades K-12.

Primary responsibilities include:

  • Plan nutritious, appealing menus to prepare from whole food ingredients and curate a collection of scaled recipes that meet menu, dietary, and budget needs
  • Plan, purchase, store, and manage inventory of food products and quantities for quality, cost-effectiveness, and safety
  • Develop and implement systems and processes for smooth, sustainable administration of camp food service operations, including creating roles and checklists, writing instructions and guidelines, creating trainings, and keeping records
  • Manage budget for food service operations
  • Lead meal preparation, service, and clean-up for up to three meals and two snacks per day
  • Accommodate dietary needs with appealing, appropriate alternatives to the main offerings
  • Manage kitchen equipment and supplies and overall dining hall space for organization, function, and hospitality
  • Collaborate with camp programs, property management, and other council departments for planning, scheduling, and promotion of food service operations
  • Maintain a welcoming and purposeful environment to ensure positive visitor experience for diverse members
  • Ensure a high level of health and safety, cleanliness, and food hygiene, including managing compliance with state health department regulations, ACA standards, and Girl Scout policies and procedures
  • Supervise, train, and schedule kitchen staff for effective team work in food service operations


Expectations:
  • This position is based at Camp Bette Perot (Palestine, TX) and will also provide some food service support at other locations, such as Camp Gambill (Sumner, TX) and Camp Whispering Cedars (South Dallas, TX), with some travel required
  • This position generally works Wednesday through Sunday during fall, winter, and spring and Sunday through Friday during summer (shared onsite accommodations are available upon request) - willingness to work a flexible schedule is essential
  • Willingness to be active and work in outdoor spaces in variable weather conditions all year - some work spaces lack climate control
  • Willingness to be welcoming, respectful, enthusiastic, and professional with colleagues, members, and the public at all times
  • Develop and maintain skills and certifications to support dynamic food service operation, including nutrition knowledge
  • Dress in attire appropriate for food service environment and in alignment with camp staff dress code
  • Obtain and maintain ServSafe Food Manager license
  • Obtain and maintain first aid/CPR certification
  • Must be able to travel within established geographic areas and council camps as necessary
  • Must have reliable transportation, hold a valid drivers' license and meet GSNETX driving record & automobile insurance requirements
  • Performs other duties, as assigned
  • Position has variable hours, depending on organization's needs
  • The employee must sometimes lift and/or move up to 50 pounds
  • Must hold membership in the Girl Scout organization and subscribe to the tenets of the Girl Scout Promise and Law
  • Attendance is an essential job requirement defined as having regular, consistent, reliable, punctual and predictable attendance including the ability to work regular hours and shifts, before and after hours, and on weekends, when required
  • Must complete and pass a criminal background check
  • Demonstrate and promote a climate of courtesy, respect and professionalism to coworkers, parents, the volunteers served by this council, campers, and others with whom her/his job puts her/him in contact

Qualifications

Minimum requirements:

  • Experience creating and managing documents for kitchen operations
  • Highly organized
  • Computer literacy, especially in Microsoft Office programs
  • Excellent verbal and written communication skills
