Full-Time Meat Department Employee

Journeyman Meat Cutter

Summary: Directly responsible for the Meat Department Head. Opens the store. Handles all department responsibilities in the absence the Meat Department Head. Assists the Meat Department Head in achieving the operational goals of the department.

Essential duties and responsibilities include the following. Other duties may be assigned.

1. Properly cut, trim, weigh, wrap, and stock a variety of fresh and packaged meat department products in a timely and efficient manner.

2. Assists in managing department inventories by tracking weekly sales reports and orders meat/product as needed to satisfy customer demand and advertised sale needs – several times a week.

3. Assists implementation of pricing on new items while maintaining budgeted gross margins.

4. Sets up advertising displays or arranges merchandise on counters or tables to promote sales.

5. Assists developing and implementing localized merchandising plan for the department, sets up and creates displays for new and seasonal items as well as items that are tied-in with other department promotions, in order to meet the sales and objectives of the store and the department.

6. Prepares, maintains and tracks all types of records concerning inventories to calculate gross margins according to store expectations.

7. Maintains effective housekeeping program. Keeps merchandise clean and fresh so as to maintain a positive customer perception and meet all health department regulations, pass sanitation inspections and meet store standards. Ensures that associates work and operate equipment in a safe manner at all times. Ensures compliance with local, state and government weights and measures laws.

8. Assists controlling department expenses by improving operations and efficiencies, by controlling costs and by reducing losses due to shrinkage.

9. Assists customers with questions

10. Unloads trucks, prepares product for sale, and stocks shelves.

11. Checks invoices for shorts, miss picks and calls in/submits items for credit.

12. Records waste and damage and process according to established guidelines.

13. Maintains COO and other regulatory requirements

14. Resets sections as needed.

15. Performs related duties as assigned or as the situation dictates.

Supervisory Responsibilities

1. Responsible for all aspects of the Meat Department in the absence of the Meat Department Head.

2. Assists in oversight the Meat Department’s productivity and efficiency.

3. Opens the store as needed.

4. Works back stock to ensure proper rotation.

Qualifications:

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. The requirements listed below are representative of the knowledge, skill, and/or ability required.

Education and/or Experience:

High school diploma or general education degree (GED); and one to three years’ related experience and/or training; or equivalent combination of education and experience.

Journeyman Meat Cutter

Language Skills:

Ability to read a limited number of two-and three-syllable words and to recognize similarities and differences between words and between series of numbers. Ability to print and speak simple sentences.

Mathematical Skills:

Ability to add and subtract two-digit numbers and to multiply and divide with l0’s and 100’s. Ability to perform these operations using units of American money and weight measurement. Ability to use and understand percentages to calculate gross margins and track performance.

Reasoning Ability:

Ability to apply common sense understanding to carry out detailed but uninvolved written or oral instructions. Ability to deal with problems involving a few concrete variables in standardized situations.

Computer Skills:

Operate a computerized scale

Current ordering technology

Certificates, Licenses, Registrations:

Ability to obtain a safe serve certification.
