JOB DESCRIPTION

Summary/Objective: Our Restaurant Chef is responsible for assisting with restaurant & stewarding responsibilities for the efficient and effective running of the kitchen, to ensure operating costs are maintained.

Primary Functions:

  • Plan, organize and control all food production
  • Maintains daily logs for all employees
  • Maintains responsibility for the hiring and proficiency of employees in the culinary department
  • Oversees the training and development of all kitchen staff and stewarding staff
  • Coaches, counsels, disciplines and trains staff reporting to this position
  • Assists the Executive Chef / Executive Sous Chef on developing a menu program that evokes change seasonally
  • Instructs cooks in the details of preparing menu items
  • Instructs stewarding team (full-time and temp agency) on daily duties, guidelines and policies from executive sous chef and executive chef.
  • Handles daily testing and evaluates food products for quality
  • Receives and keeps current a valid ServSafe certification card (required on duty)
  • Enforces the stewarding cleaning list
  • Communicates well in advance daily and weekly line ups, pre shifts, pre cons and manager meetings
  • Maintains ordering and receiving program in the absence of purchasing agent to ensure proper quality and price on all purchases
  • Operates under all guidelines, policies, and standards set by Cosmos Club
  • Is a dynamic role model for the team in all culinary aspects
  • Cover any shifts that need to be covered in the culinary department

Must be able to lift, carry, push, and pull food trays/carts up to 40 lbs with or without reasonable accommodation.

Qualifying Education and Experience:

  • Five years or more culinary experience
    • Culinary degree is preferred but not required
  • Ability to express creativity through food selections, preparations, and presentation
  • Ability to solve problems quickly under pressure
  • Basic computer skills (typing, Word, printing)
