At San Pedro Fish Market, the Line Cook must clean and prep food, prepare meals per our San Pedro Fish Market recipes and work to attain the highest level of quality for our guests. Any member of the kitchen staff should enjoy working in a busy restaurant environment with the capacity to take and follow directions and multi-task efficiently. All position responsibilities must be performed in accordance with city, state, federal and Company policy.

LINE COOK POSITION DUTIES AND RESPONSIBILITIES

1. Grooming, Dress Code and Work Attitude:
• Report to work appropriately dressed and groomed for your position, in accordance with the Employee Handbook.
• Maintain a polished and professional appearance at all times throughout the work shift.
• Always present a professional, warm, welcoming, and approachable demeanor, with a positive attitude, (towards all) throughout the work shift.

2. Compliance and Service
• Measure, assemble and properly cook ingredients for our menu items.
• Prepare components of each dish on our menu using our established San Pedro Fish Market recipes.
• Knowledge of a variety of seafood tastes and textures.
• Ability to scale, gut, fillet and portion seafood minimizing waste.
• Memorize and utilize our serving portion sizes and all basic meal prep procedures used in the kitchen.
• Review all food orders paying attention to all modifications and following San Pedro Fish Market recipe.
• Notify the Kitchen Manager of any quality issues or concerns as it relates to any food product or recipe ingredient.
• Ability to take direction from multiple departments to ensure ultimate guest satisfaction.
• Monitor product freshness and rotate product based on established procedures; label, date and rotate (FIFO).
• Properly store items at appropriate temperatures.
• Organize refrigerators, freezers, walk-in and dry storage along with work station throughout the shift.
• Restock kitchen as needed.
• Ensure food prep area and kitchen are clean and sanitized at the end of your shift.

Requirements

Job Requirements
EDUCATION & CERTIFICATIONS
High School Diploma or equivalent.
1+ year related experience in similar work environment.
Bi-lingual (English/Spanish) preferred.
Current Food Handler's Card.

KNOWLEDGE, SKILLS, AND ABILITIES
* Strong knowledge of proper food safety/handling procedures, knife skills, garnishing, sauteing, grilling, fish filleting and seafood preparation, and general food preparation.
* Working knowledge of commercial cooking equipment.
* Comfortable working within a team in a fast-paced kitchen environment.
* Ability to communicate professionally and effectively with others.
* Flexibility to work nights, weekends, holidays and overtime.
* Ability to read, write, and comprehend English.
* Ability to read, interpret, and understand an extensive variety of work-related instructions and documents pertaining to Company operations, safety, finance, HR, and payroll.
* Basic computer skills, including Internet use, E-mail, and typing skills.
* Ability to use the Company's timekeeping system and point of service system.
* Ability and willingness to learn and apply new work skill sets and concepts.
* Working knowledge of city, state, and federal hospitality laws and regulations.


Additional Information
WORKING CONDITIONS
1. Normal kitchen work environment with exposure to extreme heat or cold;
2. The noise level in the work environment is usually loud;
3. The work environment is tight and may require working in close quarters;
4. Work may involve a moderate level of stress; and
5. Physical demands are present during the full work shift (8+ hours), with the exception of duty-free meal periods and 10-minute breaks, to include:
* Visual and auditory acuity adequate to frequently monitor guest activity, use a computer and electronic equipment, assess work tasks to be completed, and read work-related documents;
* Standing, walking, kneeling, bending, and stooping;
* Intermittent overhead and low reaching, grasping objects; and
* Lifting and carrying 50 pounds occasionally, 20 pounds frequently, and 10 pounds constantly.
