We are seeking a Quality Assurance & Food Safety Manager to support the food safety and quality assurance vision, strategy, and infrastructure programs to protect and enhance the P.F. Chang’s brand.  He/she will partner with internal and external stakeholders to deliver outstanding product quality, food safety, and sanitation.

What you will do

  • Ensures compliance with all regulatory activities related to food safety and product quality. This is done through regular contact with restaurant leaders, restaurant and supplier visits, and clear communication to suppliers and all levels of the P.F. Chang’s organization.

  • Responsible for managing and maintaining PFCB Vendor Quality Program Databases, and for continuous updates and reporting for all QA activities, including regulatory.

  • Ensure new and existing food ingredients adhere to outlined specification through periodic quality checks.

  • Catalog, organize, summarize, and track all suppliers’ approval and certification documentation.

  • Develop and maintain new and existing food ingredient specifications.

  • Investigate, track, and resolve all product quality failure (PQF) complaints.

  • Perform vendor, distribution center, and restaurant food safety audits as needed.

  • Collaborate with vendors, Culinary, Supply Chain, and Operations to enhance food products related to quality, cost, and labor efficiencies.

  • Develop nutritional and allergen information utilizing ingredient and recipe specifications. 

  • Supports Customer Service and other departments with any technical, quality, public health, or food safety issues and questions.

Job Description

What we’re ideally seeking:

  • Bachelor's degree in Food Science, Biology or related field.

  • 3 - 5 years food industry operations experience, preferably within a multi-unit/chain restaurant or food manufacturer. 

  • Understanding of regulatory requirements within the food industry including GMP, HACCP, SSOP and all other pertinent USDA and FDA requirements. 

  • Prior work experience in the Food industry, a strong emphasis in Supply Chain Quality Assurance, restaurant food safety, HACCP compliance, and auditing skills, preferred.

  • Knowledge of TraQtion, Genesis R&D, or similar quality compliance and nutritional analysis software, preferred. 

  • Strong familiarity with Microsoft Office tools, including Excel, PowerPoint, Sharepoint, etc., preferred. 

  • Ability to quickly provide sound solutions to a variety of problems, issues, and concerns that surface regarding overseeing the entire Organization processes.

  • Ability to handle multiple priorities.

 

Work Environment/Physical Conditions:

  • Work is performed primarily in an office setting, and occasionally in a restaurant environment 

  • While performing the duties of this job, the employee is regularly required to stand, sit, demonstrate manual dexterity, climb stairs, talk, hear and see.

  • Must be able to travel on occasion - up to 20% of the time.

  • Tolerate temperature extremes (hot and cold) in working in walk-in and around ovens and sinks and lift up 50-lb boxes.
