Heart of House Shift Leaders supervise the execution of kitchen operations, ensuring recipe and build specifications are met and food is served in a timely manner. They assist the Kitchen Manager in optimizing profits and increasing sales by maintaining excellent food quality and controlling food cost, production, and labor in the heart-of-the-house. Professionally manage scheduled shifts, following management direction and ensuring guest satisfaction.  Ensure quality controls for cleanliness are maintained.  Learn kitchen management through on the job training.

 

The Heart of House Shift Lead:

  • Manages shifts: daily decision making, staff support, product quality and presentation.  Manages staffing throughout shift.  Provides employees with direction and feedback and communicates any product or employee issues or concerns to management.
  •  Leads the pace and flow of the kitchen, executes proper ticket times.  Maintains a “Yes We Can” attitude toward guest requests and FOH employees.
  • Controls food cost by properly handling products and controlling waste.
  • Helps ensure a safe and secure working environment to reduce the risk of injury, accidents and theft.
  • Ensures food quality by maintaining high levels of cleanliness, organization, storage, and sanitation of food products. Performs line checks throughout shift. Ensures recipe adherence. Follows daily and weekly cleaning schedules and maintenance checklists.
  • Trains HOH employees to restaurant standards. Directs and motivates HOH employees through leadership and positive direction.  Enforces uniform standards.  Provides feedback and follow-up.
  • Checks out HOH employees before and after shift and communicates with management.  Completes shift readiness and closing procedures.

Requirements

  • At least 6 months experience working at an LMR location or equivalent
  • Serves as a Leader or Trainer in their store
  • Completes shift management training program
  • Proficiency in two positions desired
  • Strong interpersonal skills
