Job Description Summary:
The Utility Steward/Dishwasher will keep and maintain the kitchen as well as the equipment.

Job Description: POSITION SUMMARY: The Dishwasher is responsible for the sanitation and cleanliness of the kitchen and ware washing of all china, glass, silver and equipment.

QUALIFICATIONS: EDUCATION, KNOWLEDGE, TRAINING, & WORK EXPERIENCE Dishwasher is an entry level position and must be of legal age to operate kitchen machinery.

ESSENTIAL FUNCTIONS:

Maintain kitchen health, sanitation and safety standards. Follow safety procedures to ensure a safe working environment. Possess basic knowledge of sanitation codes and be able to disassemble, clean and reassemble kitchen dish machine. Know the proper usage of chemicals. Assist the culinary staff with banquet dish up. Assist with the delivery of hot and cold food items to banquet functions in prescribed time. Assist with the maintenance, sanitation and safety of dock, trash area, ice room, walk in coolers, server station… to also include equipment (ie: upright carts, hot boxes, carts…) Must be able to work flexible hours, according to business levels. Provide assistance in other job classifications as determined necessary by immediate supervisor.

ENVIRONMENTAL FACTORS:

Working outside, working inside, working alone, working closely with others, excessive cold/heat, excessive humidity/dampness, noise/vibrations, working with various food product, working with chemicals/detergents/cleaners, working around fumes/smoke/gases, walking on uneven surfaces, motorized equipment or vehicles, working with and around kitchen machinery or moving equipment, handling knives and other sharp tools, working with various kitchen equipment, climbing ladders / stools and floors are concrete, carpeted or matted .

Environment includes drastic temperature changes from 0 degrees to 110 degrees. Must be able to work with and around potentially dangerous equipment such as deep fryers, ovens, steamers, mixers, grinders, sheeters, slicers, buffalo chopper etc… Additional equipment includes dishwashers, knives, proof boxes, refrigerators, freezers, grills, smokers, broilers, pressure washer, shop vacuum, cleaning equipment and chemicals. Tools; light repair tools, all kitchen utensils. Must be able to work under fluorescent lighting.
