ASSISTANT KITCHEN MANAGER

The Assistant Kitchen Manager report to the Kitchen Manager and is responsible for the day-to-day operations of the kitchen and food preparation during shifts.
The Kitchen Managers are responsible for the food safety and sanitation systems of the restaurant including insuring employee knowledge and compliance.
The Kitchen Managers are also responsible for the supervision of the ware washing team.
Additionally, Assistant Kitchen Managers will perform other duties as assigned/delegated by the General Manager and Kitchen Manager.
Other Responsibilities Include:
Training and Leading all kitchen staff
Insure accurate recipe (Ingredients and Methods) execution
Set proper prep levels and insure proper implementation
Manage a 100 Skewer Rotisserie Grill and Train Other to a high level of effectiveness
Maintain 50+ item salad bar at high quality, food safety and presentation. Train others to be able to execute the same
Recognize and solve problems or work with staff and management to find solutions
Coordinate regular maintenance and cleaning of the back of the house
THE KITCHEN MANAGER WILL ALSO ASSIST WITH FRONT OF THE HOUSE MANAGEMENT FUNCTIONS ON A REGULAR BASIS.
Qualification, Abilities and Experience Requirements
• Minimum 4 years cook or prep experience
• Must speak English, Spanish or Portuguese also desireable
• Supervisory experience preferred -- will consider entry level based on experience and work history
• Must be able to demonstrate the ability and maturity to handle authority and earn respect
• Must be able to recognize the dynamic nature of the business and the necessity for flexibility.
• Be able to enforce operational policies without prejudice or favoritism Education
Must have a minimum of a high school diploma. College degree preferred
Basic math skills are required (for computation of usage, ordering amount, % cost etc. . ...)
Language/Computer Skills
Bilingual -- (Spanish and English)
Must have the ability to read, write, and communicate in English.
Must be computer literate -- basic internet and Microsoft Office
Require use of supplier orderering software and in house inventory software
Compensation
Based on skill and experience + Bonus opportunity and benefits
