Position Description – Kitchen Manager

Overview Of Responsibilities: As Kitchen Manager, you are responsible for the overall BOH operations including all hiring of the kitchen staff, purchasing food and stock, making sure everyone is trained on proper food preparation and kitchen safety techniques. In addition, it is your responsibility to ensure that the companies standards are upheld: food presentation, temperature, properly portioned, cooked and served in a timely manner. You will also will be responsible for making sure that the kitchen is properly cleaned on a regular schedule, food is disposed properly and the kitchen meets all sanitary standards. You will work closely with your GM to keep tabs on food cost, waste, and employee hours. Always do your best to optimize profit for the company and create the best dining experience possible for customers.

Specific Functions and Duties:
• Oversee the entire kitchen operation of the restaurant
• Train & develop assistant managers and hourly employees
• Conduct all interviews for hourly kitchen employees
• Achieve or exceed restaurant’s budgets for food & labor costs
• Oversee all phases of food production
• Place orders as needed
• Ensure strict, 100% recipe adherence
• Develop and adjust order pars as needed
• Maintain a clean & sanitary BOH environment
• Proficient in all positions in the BOH
• Work closely with the GM to establish goals for the BOH
• Communicate effectively with staff, guests, and other members of management
• Maintain an acceptable health score
• Perform other duties and tasks as assigned or requested

Qualifications:

• Customer-Service: Kitchen Managers might have to interact with customers. Being friendly and courteous will help keep customers coming back.
• Attention to Detail: Kitchen Managers have to keep their eyes on a lot of elements: food standards, costs, safety, etc.
• Leadership: Kitchen Managers must be leaders in the back of house, rallying their team during heavy shifts, resolving conflicts and getting the job done.
• Management Skills: Kitchen Managers not only deal with food, they also have to deal with costs, pricing, creating work schedules and more.
• Organizational Skills: Keeping work schedules, shipments, cleaning schedules. Being organized is crucial to the job.
• Problem-Solving Skills: Dealing with employee conflict, irate customers and wrong stock orders is part of a Kitchen Managers job. Being able to come up with a solution quickly is a needed skill.
• Speaking Skills: Kitchen Managers need to accurately and easily communicate standards and cooking methods to staff, give orders and speak with customers clearly.
• Stamina: Kitchen Managers can expect long days around hot cooking elements, much of it on their feet.

As a Kitchen Manager you will be required to work and average of 55-60 hours per week, 5 days a week, with two days off, and 2 closing shifts a month mandatory.

This job will require standing for more than 6 hours; walking; using hands to finger, handle or feel and reach with hands and arms. It will require stooping, kneeling crouching, climbing or crawling. Occasionally required to climb or balance; talk or hear and taste or smell. Close vision, distance vision, and peripheral vision is required. Frequent lifting and/or moving items up to 40 pounds are also required. Exposure to wet/slippery surfaces, extremes in temperature from hot to cold, open flames, and working in tight spaces are a part of this job.
