Job Description

Position Title: 2nd Shift Bakery Manager
Date: March 11, 2018

Position objective: Reporting directly to the General Manager this position is responsible for all manufacturing/sanitation activities on 2nd shift; including 2nd shift Pizza, 2nd shift packaging, and Sanitation.

Responsibilities include:
Productivity and efficiency

1. Have functional knowledge of all manufacturing and sanitation equipment and be able to operate in emergencies. Understand all equipment settings to deliver optimum product quality and system efficiency. Understand change-over complexities.
2. Schedule personnel per production schedule to optimize efficiency.
3. Directly supervise 2nd shift Pizza, Sanitation & Packaging Leads giving clear direction to optimize work flow and maintain peak efficiencies.
4. Work closely with the Maintenance Manager and Maintenance personnel to help prioritize unscheduled repairs.
5. Provide input to the General Manager to prepare the annual CAPEX Budget.
6. Prevent loss through damage to equipment or process and through waste or damage to raw
material or finish product.

Training, Safety, & Human Relations

1. Responsible for coaching and counseling all current and future plant employees assuring good human relations are maintained.
2. Assure all employees in the departments are trained to do their job competently including operational SOP’s, sanitation SOP’s, GMP’s and department HACCP/HARPC.
3. Responsible for resolving employee issues and to maintain the open door policy with upper management.
4. Responsible for annual reviews and merit increases for all employees in the department.
5. Responsible for all hiring and disciplining of employees in the department.
6. Responsible for the safety of others and to prevent injury to self and others. Comply with and enforce established safety regulations.
7. Complete personalized annual training objectives, including class work, professional seminars, and special assignments to enhance personal career development.

Quality Assurance and Food Safety

1. Understand, apply, and maintain the HACCP/HARPC plan applicable to 2nd shift.
2. Assure all electronic labels have accurate ingredient statements that match final finish product packaging. Assure audits for label accuracy are conducted per QC standards.
3. Assist in the monthly self-inspection GMP audits and assure corrective actions for area of responsibility are completed on time.
4. Conduct daily reviews for all QC items; assist with the development of new QC standards.
5. Participate in annual AIB/WDA/FDA audits.
6. Maintain general housekeeping standards.

Sanitation

1. Up-date and maintain the Master Cleaning Schedule to assure effective plant sanitation.
2. Work with the Food Safety Manager to initiate corrective action on environmental micro monitoring non-compliance issues.
3. Schedule sanitation personnel to accommodate for a constantly changing production schedule allowing for overtime in all departments.
4. Assure the chemical control program is followed to prevent any cross-contamination issues.
5. Maintain the (operation, and sanitation) SOP’s for the sanitation department.

Other duties

1. Fill-in for the General Manager in his/her absence.
2. Attend staff, departmental and team lead meeting and training sessions.
3. Keep the General Manager informed on all issues; human safety/relations, quality/food safety and major breakdowns/downtime.
4. Work closely with the customer service and Inventory control personnel to assure company order fulfillment standards are met.
5. All other duties as assigned.
