Job Description

The Cashier, the Cook, and the Assembler are the “engine” of Peño Grill. They must work in complete and utter unison like a well-oiled machine, to make the entire restaurant experience a success for the customer. They are the face of Peño Grill. Their main responsibilities are to take and fill orders fast, courteous, beautiful, and accurate. Also, maintaining the dining area for customers in a constant state considered cleaner than at home. Each store, depending on demand, will establish the number of Cashiers, Cooks, and Assemblers that work various shifts.

 

Every team member that comes on board is hired as either a Cashier, Cook, or Assembler. They first master the role they are hired for and then they are exposed to the other two roles. Within 4 weeks, they should be able to perform all 3 positions.

 

Overall duties:

  • Acknowledge and greet every customer, every time, but not by everyone. We don’t want the awkward “welcome to moes”.

  • Fill in the gaps. Ex: When all customers at the register have been helped, the cashier can step in to help the cook. Or, when the cook has all the meat ready for all tickets, then the cook can step in to help the assembler plate dishes.

  • Complete open/closing/shift checklists.

  • Speed, Accuracy, Beauty, Courteousness

  • Communicating amongst others in the engine.

 

  • Cashier

    • Great customers and explain menu when not serving someone.

    • Their most important thing is the customer standing in front of them at the register. Never let that customer think there are things on your mind that are more important than them.

    • Operate the cash register, credit cards machine, keep an eye on change levels in drawer.

    • Keep POS area clutter free and clean.

    • Accurately input customer orders.

    • Answer the phone and take customers orders.

    • Keeping the closest eye on the dining room and calling out instructions in front house for floater.

    • Refill Napkins, cups, cutlery, etc

    • Prepare sides and salads between ringing up a customer.

    • Liaise between the Cook/Assembler and the customer.

    • Watch display case inventory levels.

    • Keep display case spotless.

    • Clean tables and customer area when available to step from behind counter.

    • It should take 1 week to master this role

  • Cook

    • Greet customers and explain menu when not serving a customer.

    • The grill, the fryer, and the meat fridge. Use them properly and keep them clean.

    • Keeping meat cooked for anticipation of orders.

    • Keep cooking area clean and organized. (practice proper meat sanitation procedures)

    • Ensure accurate portions.

    • Ensure every item is cooked to specifications.

    • Manage inventory levels of items needed for cooking.

  • Assembler

    • Greet customers and explain menu when not serving a customer.

    • The Assembler is the camshaft of the engine. They are in charge of what’s going on.

    • Typically Serv-Safe Certified.

    • Responsible for:

      • Assembling all outgoing orders (plating and packaging to-go) beautifully.

      • Keeping all orders in line and ensuring their accuracy.

      • Communication with the cook to let them know what to throw on the grill.

      • Visual last check for presentation to Peño Grill specifications of anything that goes out.

    • Keeping an eye on inventory levels of prep fridge ingredients.

    • Monitoring food waste

    • Keeping work area clean and organized.

    • It should take 1 week to master this role.

  • Floater

    • The floater is only available depending on the sales volume of the store. At most stores, the Kitchen Manager steps in as the floater for the rushes. Typically, an employee is not hired as a Floater.

    • Their main goal is to do all the things that a Cashier, Cook, and Assembler cannot do because they are stuck at their stations filling orders.

    • Cleaning dining area.

    • Supporting Cashier, Cook, and Assembler as needed.

    • Running items back and forth to kitchen.

    • Refilling napkins, cutlery, cups, etc.

    • Step in to fill side orders.

    • Keep display case clean, stocked, and presentable.
