Job Description:
Responsible for quality assurance monitoring, coordinating, and documenting QA activities in the production and warehouse areas. Ensures implementation of quality assurance and other requested company standards throughout production, receiving, and shipping. Maintains documentation of records including any HACCP requirements.
This position does require a lot of walking and standing. Must be able to work in cold and hot environments.
Essential Functions:
Complete all necessary HACCP/CCP forms and all defined actions within, and address comments and concerns with supervisor within 24 hours.
Daily checks of temperatures and visual inspections in production and warehouse and freezer/ cooler storage areas.
Calibration of thermometers and sanitizer solution tests and documents.
Pre-shipment and other approvals of HACCP/CCP paperwork.
Monitor GMPs in production and warehouses for compliance and record on approved forms.
Inspect raw materials for proper specifications, codes, Lot numbers, and dates including information necessary for lot tracing on batch sheets and other approved forms.
Maintain weight controls for ingredients, subassemblies, and finished products and give feedback for adjustment to maintain appropriate targets.
Monitor and record packaging specification are followed and record the results on approved forms. Check codes of finished products for compliance to customer specifications'.
Monitor check weight and net weights of product to ensure compliance with standard. Audit proper functioning of metal detector/x-ray unit and insure compliance with CCP directives from HACCP Plans.
Complete deviations/ hold tickets for out of specification materials, CCP deviations and take corrective actions, including notification of QA and Production Management.
Monitor Pre-Op and Operational Sanitation compliance and record information/ deviations and follow up/ communicate as necessary for appropriate action.
Perform Pre-op inspection, which includes ATP swabs
Test each batch of product
Perform the following tests on products: Brix, pH, Bostwick, Taste, Color, Texture, Specific Gravity, Starch Test
ATP Swabbing
Moisture Analysis
Daily GMP Inspection
Take weights and graphing of products
Record material lot #'s
Verifying product is made correctly
Verify labels and packaging
Perform Post-op Inspection
Follow Food Safety Requirements

Requirements
2 years related food manufacturing experience. Knowledge of Good Manufacturing Practices. Must have strong writing, math, oral communication, and basic computer skills. Position requires ability to work effectively with production and warehouse personnel.
