JOB PURPOSE: Responsible for directing the food and beverage operations for all casino gaming enterprises including casual dining, quick service outlets, and fine dining. Improves and streamlines department operations through the continuous assessment of policies and procedures, work processes, program effectiveness and value.

Assist qualified Pueblo of Pojoaque Tribal members in employment opportunities with the Pueblo of Pojoaque Businesses by hiring, coaching and supporting their career growth.

ESSENTIAL FUNCTIONS:
  • Recommends and applies policies, procedures and controls that safeguard assets and meet casino gaming expectations.
  • Develops a goal-oriented business plan that includes achievable financial goals. Develops and supports the sales promotion plan in accordance with the business plan and marketing initiatives.
  • Closely monitors the solicitation and booking activities by reviewing reports and conducting periodic spot checks.
  • Creates new programs in response to market conditions and revenue opportunities.
  • Ensures that effective cash and asset controls are in place throughout the property.
  • Follows through with guest comment program and responds quickly and effectively to correct deficiencies.
  • Maintains knowledge of local competition and general industry trends maximizes sales potential.
  • Ensures good safety and health practices for customers, guests, and visitors.
  • Achieves budgeted sales and maximum profitability.
  • Reviews and approves all personnel actions as appropriate including performance appraisals, organizational changes, and pay changes.
  • Ensures that all food and beverage outlets meet all legal and regulatory requirements and meet casino gaming expectations.
  • Provides technical guidance to all Food/Beverage management staff as needed.
  • Insures continuous process and operational improvement and outstanding customer service in all food and beverage outlets.
  • “Manages by Walking Around” all the food and beverage outlets
  • Other duties as assigned

REQUIRED QUALIFICATIONS (KNOWLEDGE, SKILLS, AND ABILITIES):
  • Must be at least 21 years of age or older
  • Extensive knowledge of the hospitality/food and beverage service industry including technical, administrative, legal and management requirements.
  • Extensive knowledge of casino gaming and Pueblo policies, procedures, and regulations.
  • Extensive knowledge of management and decision-making concepts, principles, and processes, and the ability to apply them properly and effectively; a team leader.
  • Demonstrated proficiency in business planning; preparing and managing budgets and administering guest and personnel activities.
  • Demonstrated ability to handle a variety of customer requests and personalities; maintains outstanding customer service; solves problems requiring judgment, ingenuity, and creativity.
  • Good verbal and written communication skills
REQUIRED EDUCATION OR COMBINATION OF EDUCATION AND EXPERIENCE:
  • High School Diploma or GED required, 4 year degree preferred
  • Minimum of 10 years managerial experience in the casino gaming-food and beverage industry
  • Demonstrated expertise in managing customer-oriented, outstanding food and beverage outlets
  • Demonstrated executive management skills with business plans, cost containment, and revenue generation in food and beverage operations

PHYSICAL REQUIREMENTS/WORK ENVIRONMENT:
  • Standing-30% /Walking-40% /Sitting-30%; primarily on enterprise properties and office setting.
  • Some light lifting and carrying required
  • On 24-hour emergency call.
  • Some travel required
