Job Description Summary:

THE TENNESSEAN Hotel Server/Food Runner is a professional individual who can uphold a gracious, thoughtful, polite, and polished culture of service. The Server/Food Runner serves guest while exceeding expectations and providing a memorable, luxury dining experience. The Server/Food Runner must anticipate guest’s needs, communicate effectively, and work closely with the entire Drawing Room Team to ensure a flawless dining experience.

Overview:

  • Greet and welcome guests as they arrive
  • Maintain detailed knowledge of The Drawing Room Menu
  • Responsible for taking guest orders
  • Serve food and beverages in accordance with the standards of THE TENNESSEAN Hotel
  • Responsible for guest satisfaction in The Drawing Room
  • Maintain cleanliness of all workplace areas that apply to The Drawing Room
  • Must be in accordance with the Appearance Standards Policy of THE TENNESSEAN Hotel at all times
  • Complete any reasonable task as assigned by a Supervisor or Manager

Essential Job Responsibilities:

  • Ensure The Drawing Room guests are greeted and welcomed as they arrive
  • Responsible for seating guests and presenting menus
  • Explain menu items in detail, including specials
  • Must maintain a detailed knowledge of the menu items and ingredients
  • Provide suggestions and recommendations to guests of The Drawing Room
  • Maintain knowledge of any items the kitchen may be out of or running low on
  • Take guest food and beverage orders using the appropriate POS system (MICROS)
  • Check guest’s identification and confirm the guest meets the legal drinking age
  • Communicate with kitchen staff regarding meal requirements, allergies, dietary needs, and specific/special requests
  • Responsible for relaying any allergies or food sensitivities to the kitchen and fellow team members
  • Prepare drink orders that are not handled by the bar in accordance with the standards of THE TENNESSEAN Hotel
  • Serve wine, beer, and other alcoholic beverages in accordance with federal, state and local regulations.  Ensure compliance of all OSHA, Knox County Department of Health, and Tennessee  State Department of Health regulations
  • Address guests by name whenever possible
  • Ensure all food is plated and portioned correctly before delivering to guest
  • Responsible for transporting food and beverages from the kitchen to the dining tables
  • Ensure guest satisfaction throughout the entire dining experience
  • Anticipate and communicate replenishment needs effectively
  • Responsible for removing dirty dishes and glasses
  • Responsible for bussing and cleaning tables after guests finish their meals or beverages
  • Prepare an itemized check and take payment from guests.  Ensure the check is correct before presenting it to the guest.
  • Process all payment methods.
  • Count bank at end of shift, complete designated cashier reports, resolve any discrepancies, drop off receipts, and secure bank.
  • Set up and maintain cleanliness and condition of dining room 
  • Responsible for removing soiled wares from tables and place in the designated areas
  • Responsible for resetting all tables in The Drawing Room.  Ensure all furniture is in accordance with the floor plan set forth by the Manager or Supervisor
  • Ensure serving station is well-stocked
  • Responsible for completing opening and closing duties
  • Responsible for completing any side work assigned
  • Deliver cocktails to tables as needed and assist fellow team members
  • Secure liquors, beers, wines, spirits, coolers, cabinets, and storage areas
  • Assist in other food and beverage departments as needed or requested
  • Ensure safety guidelines are met and maintained at all times
  • Ensure compliance to state and county liquor control laws
  • Ensure compliance with food handling and sanitation standards.
  • Ensure compliance to local and state health department requirements
  • Maintain a continuous and positive relationship with other departments as well as the entire Drawing Room team
  • Guarantee guests are receiving quality services that exceed their expectations
  • Uphold the culture and standards of THE TENNESSEAN Hotel and be an exemplary ambassador of the property and brand
  • Participate in all line-ups and departmental meetings, unless otherwise excused in advance by The Drawing Room Manager.
  • Remain knowledgeable of all hotel information and local events
  • Respond to any reasonable tasks as assigned by a Supervisor or Manager
  • Report any and all damages or maintenance issues immediately to Engineering
  • Communicate efficiently and effectively with all other team members.
  • Responsible for completing any training certifications or retraining as directed by a Manager or Human Resources. 
  • Report any and all suspicious activity or items immediately
  • Resourcefully, creatively, efficiently, and politely handle any and all guest complaints
  • Ensure all guest complaints are reported to the appropriate Managers and/or Supervisors in order to avoid missed guest opportunities.
  • Ensure all lost and found items are handled appropriately in accordance with the standards of THE TENNESSEAN Hotel
  • Report any and all issues in order to avoid missed guest opportunities and poor reviews
