Job Description

Duties and Responsibilities:

Workforce

  • This position demands the ability to communicate effectively and to lead production personnel efficiently and respectfully.
  • Supervise the hiring and training of hourly bakers, shapers, mixers, packers and drivers as needed (including performance management from orientation through termination).
  • Supervise and manage the salaried and hourly factory workers and support team.
  • Create and maintain efficient work schedules.
  • Communicate and delegate responsibilities to production personnel to meet set goals.
  • Ensure Simit and Smith health and safety standards are met.

Product & Production

  • Ensure production process is consistently followed to Simit and Smith standards to safeguard the making of artisan bread and desserts.
  • Overview all food preparation steps to ensure consistency and high quality.
  • Develop new products in keeping with our brand.
  • Knowledgeable of all production systems and machinery in order to ensure efficient production that sustains our high standards.
  • Oversee the Preventive Maintenance Program and ensure machinery is being used properly and well maintained.
  • Accountable for employee safety programs, Food Safety and Sanitation policies, and health code regulation compliance.

Distribution

  • Responsible for all aspects of delivery, including supervising and packaging
  • Responsible for all aspects of the retail and wholesale distribution system, which includes wholesale deliveries.
  • Oversees the Company’s delivery vehicle fleet, ensuring proper maintenance and service protocols are followed.

Financial Accountability

  • Manage a multi-department P&L, provide needed financial reporting/forecasting, and ensure financial performance goals are met.
  • Oversee the annual budget/forecast process for Factory
  • Manage cost analysis of new and existing products, establishing pricing based on target margins.

 

Qualifications:

  • 5 + Years of hands-on experience as a bakery production / plant manager
  • Exceptional management skills, including prior team supervision and development.
  • Must be expert in production planning
  • Must have an extensive knowledge of Inventory, warehouse & quality assurance management
  • Prior budgeting and P&L expertise required, Must be able to prepare policies and procedures to comply with the production requirements
  • Must be able to train and develop associates on standard operating procedures, Lean Manufacturing Best Practices, GMP's
  • HACCP Certified / FDA experience preferred
  • Knowledge of SAP ERP would be an asset but not required
  • BA Degree in Food Engineering or Biology would be an asset but not required
  • Prior experience with product development and product costing is highly valued.
  • Position may be required to work a varied schedule which many include nights, week-ends and holidays. Reliable and predictable attendance is required.
  • Maintain skills necessary to safely and efficiently operate the following equipment and machines used in the performance of this job such as oven, stove, dishwasher, slicer, coffee machine, mixer, and knives.
  • Ability to develop and maintain awareness of occupational hazards and safety precautions; skilled in following safety practices and recognizing hazards.

This position will report directly to the President, this role is responsible for the production of bread and delicious pastries we produce in our Central Production Facility (CPF), and supervises all of our hourly and salary CPF Bread heads. We seek an experienced leader who is well-versed and passionate about the art of making bread and can organizationally manage production at our scale.
We also produce and distribute baked bread to wholesale customers. The CPF Production Manager ensures the consistent quality of our daily production and leads a team of hourly and salary Bread heads.
