Santiago's Bodega - Key West is an aproximately 65 seat restaurant. The right candidate must be comfortable in a kitchen with limited space that operates at full throttle year round. Staffing is a challenge in Key West and the right Sous Chef must have experience in building a loyal team. The preferred candidate will work side by side with the team. Meaning someone that is not above doing the dishes and working the hot line.

The position is not one of standing at the expo line with tweezers in hand. The menu is set and requires consistency. The menu can be viewed online at www. santiagosbodega.com. The Sous Chef working with the Executive Chef will have the freedom to let their culinary skills shine through specials. Globally inspired tapas allow for creativity and an open canvas in which to work.

REQUIREMENTS: Management candidates should possess excellent communication skills and always appear calm and composed - especially in high pressure situations. They are expected to appear polished and professional always yet approachable to staff members and guests. This person should believe in leading by example; having a positive influence on employee behavior and staff morale by being a natural leader while still acting as a team player. Managers are responsible for overall management of Santiago’s Bodega. Ensuring quality of service and guest satisfaction is always the top priority. At The Bodega we are throwing a party every day. Doing circles around the property and touching every table is required. · Strong knowledge of commonly-used concepts, practices and procedures in a restaurant is required · Strong financial skills; experience working with and an understanding of P&L's. · Working knowledge of computer programs (MS Word, Excel, PowerPoint, Outlook, etc) · Knowledge of restaurant POS system management operations · Ability to work a flexible schedule. (days, nights, weekends, and holidays) · Proactive guest issue prevention/guest relations skills · Previous experience recruiting, developing and managing multiple types of personalities is required · Must be able to create fun in a fast-paced and stressful environment · Must have strong communication and interpersonal skills to deal effectively with all types of business contacts

  • Assist Corporate Executives, General Manager, and Executive Chef with Annual Planning
  • Food Manager Certified, Continued Education-Online, Books, Magazines, Tradeshows, Seminars
  • Organization of the Back of the House – Sanitation, Inventory/Product Storage, Order Forms, Invoices, Etc.
  • Team Member Scheduling
  • Inventory Front/Back of the House
  • Consistency is King - Menu Item Costing, Plating and Presentation, Correct Menu Item Weights and Serving Sizes
  • Equipment Maintenance and Sanitation – Equipment Schedules
  • Attend and provide input to weekly management meetings
  • 24 Hour Phone and Email availability
  • 50+ Hour Work Week
