  • 20 Interact positively with guests promoting hotel facilities and services. Resolve
  • problems to the satisfaction of involved parties. Must be present in the Bistro during busy times. Maintain rapport with all departments and attend relevant meetings.
  • 15 Move throughout facility and kitchen areas to visually monitor and take action to
  • insure food quality and service standards are met. Verify temperatures, judge
  • appearance and taste of products and check preparation methods to determine quality. Give guidance toward improvement and make necessary adjustments for consistency. Ensure that all goods are stored properly and rotated utilizing the FIFO method.
  • 15 Maintain profitability of both outlets. Control food and equipment costs (minimizing loss and misuse). Ensure par stock levels are maintained by calculating inventory, ordering and receiving F & B supplies and stocking shelves by stooping, bending, lifting heavy articles and reaching overhead. Evaluate cost effectiveness of all aspects of operation. Develop and implement cost saving and profit enhancing measures. Insure production charts/tools are used to provide balance between having product and not-wasting product.
  • 10 Accept and understand various assignments and provide quality results using prior knowledge, independent thinking, and research. Develop and provide hotel leadership with suggestions, including well-developed plans. Maintain an attitude of continuous improvement.
  • 10 Coordinate and execute all food and beverage with the sales department for the meeting rooms and hotel functions on a weekly basis.
  • 10 Interview, select, train, supervise, counsel and discipline Bistro staff for the efficient operation of Food & Beverage dept. Organize and conduct departmental meetings. Schedule and direct staff in their work assignments.
  • 10 Tracking labor, food safety, and loss prevention data on a daily basis and turning in on a weekly report, schedule, and bank count. On a daily basis the daily defect report.
  • 5 Participate in the hotel’s MOD program
  • 5 Obtain competitive pricing quotes and placing orders for necessary items trying to get the best quality for the best price. Responsible for weekly updating inventory prices and taking weekly food and beverage inventories. Check each item on the invoice against P.O., weighing, counting, verifying prices on each item and checking these against specs to verify accuracy of delivery.
  • Regular attendance in conformance with the standards, which may be established by the hotel from time to time, is essential to the successful performance of this position.
  • Due to the cyclical nature of the hospitality industry, may be required to work varying schedules to reflect the business needs of the hotel.
  • Upon employment, all team members are required to fully comply with hotel rules and regulations for the safe and efficient operation of hotel facilities. Team members who violate hotel rules and regulations will be subject to disciplinary action, up to and including termination of employment.

 SUPPORTIVE FUNCTIONS:

  • In addition to performance of the essential functions, this position may be required to perform additional functions as determined by the supervisor based upon the particular requirements of the hotel.
  • Take quarterly inventory of glass, china and silverware.
  • Ensure maintenance of all F & B related equipment by reporting to the engineering department and training staff on proper use of these.
  • Conduct monthly meetings and training sessions to ensure staff is exceeding service standards.
  • Provide clean and safe environment by assigning and assisting with cleaning and checking opening and closing duties as assigned. Help expediting in seating and food preparation as needed.
  • May need to work in any other department in case the need arises.
  • Required to attend weekly staff meetings with all managers and supervisors.


SPECIFIC JOB KNOWLEDGE, SKILLS AND ABILITY


The individual must possess the following knowledge skills and abilities and be able to explain and demonstrate the ability to perform the essential functions of the job with or without reasonable accommodation, using some other combination of skills and abilities.

Knowledge of all applicable federal and state employment laws and regulations.

Knowledge of Food & Beverage outlet operations including foods, beverages, supervisory aspects, service techniques, and guest interaction.

Considerable skill in math and algebraic equations using percentages.

Able to set priorities, plan and organize.

Ability to walk, stand, and/or bend continuously to perform essential job functions.

Ability to move or lift up to 50 lbs and to lift lighter objects overhead.

Ability to communicate in English, both orally and in writing, with guests and team members, some of whom will require high levels of patience, tact, and diplomacy to defuse anger and to collect accurate information and to resolve problems.

Ability to work under pressure and deal with stressful situations during busy periods.

Any combination of education and experience equivalent to graduation from high school and additional training to acquire required knowledge and skills.


EXPERIENCE:

  • Minimum of one year hotel experience required (preferably in F&B).
  • LICENSES OR CERTIFICATES:
  • CPR Certification and First Aid training preferred.

GROOMING:

All team members must maintain a neat, clean and well groomed appearance in accordance with Ramhotels & Courtyard standards. Uniform required.
