The Front of the House Manager under the supervision of the General Manager/Executive Pastry Chef is responsible for the execution and ongoing operation/results of a new venture pastry shop. This position will include the handling of the closing duties maintaining general order in the restaurant assisting the Pastry Chef with administration of payroll ordering supplies end of the night cash outs/dividing tips and scheduling.

  • Key player in the implementation of new venture pastry shop. Will assist in operating shop within budgets in managing the P&L and creating reports to track and manage on a daily basis.
  • Assists General Manager/ Executive Pastry Chef in flawlessly executing the 3 year plan established for the shop which may include expansion special events catering and delivery Lead human resource activities at the shop including: recruitment activities; conducting staff training; evaluating staff performance and staff performance planning and appraisal meetings ensuring all employee files are accurate and up-to-date and developing weekly staff schedules.
  • Ensures shop is at optimum staffing level and is being scheduled properly where business dictates. Responsible ensure team members conduct themselves in a manner consistent with company mission values code of ethics policies and other standards of conduct.
  • Work collaboratively with the Executive Pastry Chef to direct the activities of the staff and to ensure that critical functions are being performed satisfactorily throughout the restaurant and to provide the appropriate guidance to ensure that tasks are performed correctly.
  • Above all primary responsibility every day will be to develop and coach team members and ensure customers have an unparalleled experience at the location. Takes responsibility for their own performance as well as the overall performance of the shop and its people.
  • Read and interpret documents such as safety rules operating and maintenance instructions and procedure manuals.
  • Speak effectively before groups of employees when delegating tasks or giving instructions. Plan collaboratively with the lead bartender and Baristas to ensure products are fully stocked rotated and order is maintained for guaranteed guest satisfaction.
  • Will lead counter staff in making sure all customer facing operations are clean organized and well stocked for each service to ensure guaranteed guest satisfaction.
  • Work with Executive Pastry Chef to maintain all food display cases are either fully stocked or well organized for guest view.
  • Must be able to teach and delegate duties responsibilities and tasks to managers and team leaders.
  • Assists Executive Pastry Chef in regular inventories to maintain liquor NA bev and coffee costs Work to determine par levels for liquor NA bev and coffee products and maintain those pars through inventory and ordering. Manages and maintains facility to meet regulatory guidelines.
  • Maintains safe and healthy environment by establishing and enforcing sanitation and safety standards procedures & training. Individual must complete Food Safety Manager Certification and Alcohol Safety training and ensures all staff is properly trained and up-to-date on certifications.
  • Become an expert on POS system in order to perform sophisticated management functions; perform closing activities; and trouble-shoot when technical issues arise.
  • Maintains physical condition of the building by overseeing the proper use of all equipment ordering supplies as needed and assist Executive Pastry chef in implementing periodic preventative maintenance program Manages relationships with vendors and purveyors.
  • Documents procedures product information and beverage recipes. Completes weekly inventory and ensures all reporting is being submitted to Corporate Office in a timely manner
  • Monitor security to maintain security of employees and guests. Plays a key role in helping to establish a highly-positive image for the shop.
  • Partners with agencies and corporate communications teams to develop and distribute marketing materials including social media event website and public relations.
  • Has regular check-ins with Executive Pastry Chef to get any and all updates from the Brand team to ensure the brand portrayed in the shop by adhering to brand guidelines.
  • This position requires a strong team player with an extraordinary commitment to excellent customer service. S/he will also demonstrate a strong work ethic and a high level of integrity. Works well in group problem solving situations; Uses reason even when dealing with emotional topics and is able to identify the root cause of a problem find a solution and solve it.
  • Manages difficult or emotional customer situations; Solicits customer feedback to improve service
Qualifications
Education: High school diploma or equivalent (Bachelor's Degree ACF or RCA certification preferred)

Years of Related Experience: 4-7 years related experience.

Knowledge/Skills/Abilities:
  • Advanced communication and interpersonal skills
  • Knowledge of culinary food preparation methods and techniques
  • Knowledge of restaurant service styles and techniques
  • Intermediate PC skills including Microsoft Suite
  • Ability to research recipes and trends
  • Solid mathematical skills including algebra percentage fractions and word problems
  • Ability to create and work with simple to complex worksheets
  • Ability to operate and maintain basic foodservice and lab equipment.
