Chef De Cuisine

POSITION SUMMARY

Job Title: Chef De Cuisine
Reports to: Corporate Executive Chef
Location: Grand Rapids, Michigan
Education: High School Diploma or equivalent experience. Culinary degree and ServSafe certification preferred
Experience: Minimum of 3-5 years in a Head Chef position demonstrating advanced culinary creative ability.  5+ years preferred
Skills: Able to effectively communicate with the leadership team, external business partners, and kitchen staff.  Proven track record of mentorship and able to safeguard confidential and sensitive information.  Strong knowledge of food safety guidelines and proficient with business software.



ESSENTIAL RESPONSIBILITIES:

  • Develop exceptional recipes that introduce new flavors, ingredients, and products that are a match for the Twisted Rooster concept.
  • Innovate unique menu items and specials that allow the Twisted Rooster brand to lead the marketplace as a quality culinary dining experience.
  • Introduce new Michigan-based products and ingredients, upholding the Meritage “Commit to the Mitt” campaign.
  • Create a focused array of delicious and healthy menu items that attract first-time guests and entertain the growing base of loyal returning “regulars”.  Be a key player in creating the Twisted Rooster experience.
  • Analyze competitive ability by conducting market comparisons and planning menu enhancements that allow the restaurant to continue leading the market.
  • Supervise food production for recipe accuracy with our Twisted Rooster Restaurant Chefs and General Managers.
  • Assist the CEC with outlining production goals and position expectations for the Twisted Rooster store level chefs.
  • Review product vendors with the Twisted Rooster Chefs, General Managers, District Manager, CEC, and purchasing staff to ensure quality and cost-effective partnerships are maintained.
  • Assist the CEC with communicating standards for organized, clean, and efficient kitchen facilities that are compliant with Health codes and employment laws. Perform evaluations with the restaurant Chefs and General Managers.
  • Implement procedures for routine maintenance checks of essential kitchen equipment to be performed by Twisted Rooster chefs and kitchen staff.  Communicate issues and challenges to the CEC, and seek to resolve those issues as a team.
  • Partner with CEC to hire, develop, and retain exceptional Chefs to be culinary experts and effective kitchen managers for the Twisted Rooster brand.
  • Promote the Twisted Rooster brand and concept at all times including various media outlets and social events by working with District Managers and Marketing.
  • Assist the CEC with input regarding menu changes and features at the Twisted Rooster concepts. Use product mix, guest feedback, and staff feedback to inform menu change decisions.
  • Help to create vendor relationships with CEC.
  • Continue to advance culinary knowledge through study, training, research of market trends and local competition.


WORK ENVIRONMENT

This position will require at least 20% working in a corporate office setting, sitting, standing, communicating with others through verbal and email communication with time spent working at a desk and in front of a computer.  The remaining 80% of the time will be spent in the restaurants and will include physical demands including driving to different restaurants, working in a kitchen environment and lifting up to 75 lbs.  Must be willing to travel throughout the state on a regular basis.
