Executive Sous Chef - Keystone Conference Center 

The Executive Sous Chef at the Keystone Conference Center is responsible for all culinary related functions including but not limited to menu development, specification of food, food quality and presentation, storeroom operations, all financial results related to kitchen, hiring, training and ongoing development of culinary staff.  Interaction with guests as well as managers and Chefs throughout the resort.  Oversee food production for multiple outlets. Manager, teacher, and mentor for culinary apprentices.  Within the Keystone Food and Beverage Department, we strive for “One Keystone” as well as a friendly and engaging team atmosphere.

 Essential Job Responsibilities:  

  • Must be able to work in high pressure, fast paced environment.
  • Perform all of the routine duties of the Executive Chef is his/her absence.
  • Responsible for day to day operation of the kitchen.
  • Responsible for offsite catering and delivering of equipment.
  • Purchasing and procurement of food for $1,000,000+ in annual purchasing.
  • Receiving purchase orders, Counting and processing monthly inventory, balancing accruals.
  • Writing schedules for kitchen cooks and dishwashers.
  • Maintains regular attendance and is consistently on time.
  • Maintains high standards of personal appearance and grooming, which include compliance with the Vail Resorts personal presentation policy.
  • Payroll management and approval for kitchen, bakeshop, and dishwashers.
  • Continuous focus on development and training of staff.
  • Oversee organization and cleanliness of kitchen operations and BOH storage areas.
  • Food Safety across all operations and functions.
  • Check and maintain food quality of all food served and produced.
  • Responsible for driving, training, and maintenance of company trucks.
  • Responsible for apprentices of the Culinary Arts Apprenticeship program – Colorado Mountain College. 

 

Physical Job Requirements:

 

  • Ability to stand for extended periods of time.
  • Ability to bend, lift and carry heavy objects
  • Ability to work in outside environments

 

Qualifications:  

  • Minimum 5 years in high volume restaurant or banquet operation
  • Minimum 5 years of direct management experience - preferred
  • Culinary Degree – preferred
  • Ice Carving Experience - preferred
  • High School Diploma or Equivalent - Required
  • CO Driver’s License - Required
  • Satisfactory driving record – Required
  • Serve Safe Food Protection Manager Certification – preferred
  • Excellent communication skills; you will need to coordinate all kinds of people and ensure they are properly trained
  • Intermediate or better computer skills; working knowledge of Word/Excel/Outlook, previous experience with purchasing systems and Time and Labor
  • Ability to communicate in Spanish preferred, English required
