Job Description

Responsible for assisting in directing and coordinating all pastry and baking preparation for all hotel outlets.

Responsibilities

* Prepare innovating, cutting edge and appealing pastries and breads for all outlets, ensuring superior production.

* Directly supervise associates within Pastry department, and assist with performance management and evaluations.

* Assist with interviewing, hiring, and training associates; planning, assigning, directing work.

* Assist in administering payroll for department staff, ensuring associates are paid correctly.

* Teach and mentor associates the importance of consistency in preparation and presentation, and instill safety and sanitation habits in all department staff.

* Assist in requisitioning and properly ordering all items needed weekly from the food storeroom, non-food storeroom and stewarding department.

* Keep walk-in, prep area and equipment up to Health Department standards at all time.

* Ensure proper sanitation procedures are followed and the pastry shop is always clean, neat and orderly.

* Ensure an adequate supply of all products prepared on a timely basis.

* Ensure departmental compliance with company standard recipes.

* Perform job functions with attention to detail, speed and accuracy.

* Ensure that level of quality, portion control, and plate presentation is adhered to consistently.

* Produce and supervise daily pastry preparation for all assigned areas including outlet pastry set up and banquets.

* Attend BEO (banquet event order) meeting daily, in absence of Pastry Sous Chef.

* Communicate any issues with the Pastry Sous Chef weekly.

Qualifications

* 1-2 years minimum pastry related experience is required.

* 1 year minimum supervisory related job experience is preferred, but not required.

* Ability to prioritize, organize, delegate work and follow through.

* To be a clear thinker, remain calm and resolve problems using good judgment.

* Experience in production techniques of large banquets.

* Pastry related education is preferred but not required.

* Must maintain current Texas Food Handler certification.

* Must be able to perform job functions with minimal supervision.

* Basic math skills needed to understand and implement recipes and measurements.

* Ability to stoop, lift and or carry or otherwise move or push goods on a hand cart of moderate weight.

* Ability to work standing up in a confined area for long periods of time.
