The primary purpose of the Master Mixologist is to provide strategic direction for BELLAGIO'S luxury cocktail and spirits programs while ensuring these programs meet BELLAGIO and MGM Resorts International standards for quality, cost effectiveness and profitability. A successful candidate must have in-depth knowledge of all world spirits, beers, mixology techniques, classic cocktail recipes and industry standards related to managing a major beverage program. All duties are to be performed in accordance with department and property policies, practices and procedures.

  • Create, develop and implement new beverage menu items, tests and writes all recipes for all bars and lounges.
  • Develops and implements a comprehensive training and education program for all BELLAGIO beverage staff.
  • Manages relationships with corporate partners and assist the Food and Beverage leadership, with annual sponsorship budgets and activation business plans.
  • Direct the Beverage Managers and Assistant Mangers in the daily oversight of all lounge, bar and outlet operations.
  • Assist the Food & Beverage leadership in the development and execution of the strategic plan and vision.
  • Partners with corporate sponsors to implement live, on-line and web based beverage education and training programs customized to BELLAGIO'S program.
  • Oversees the implementation of new products, brand training and all staff sales incentive programs.
  • Conducts research and provide strategic recommendations to division and property leadership.
  • Manages Profit & Loss statements and utilize Spot Fire to maximize sales and profits, manage labor and control costs.
  • Maintains complete knowledge of all liquor brands, beers and non-alcoholic selections available in outlets, the particular characteristics and description of every wine/champagne by Writes and administers all testing materials for promotional bids.
  • Maintains complete knowledge of and comply with all policies, procedures, and standards.
  • Responsible for Human Resources functions, including hiring, training, coaching, professional development, discipline, firing, and other changes to an employee's status.
  • Creates and maintain a work environment that promotes service, teamwork, performance feedback, individual recognition, mutual respect, and employee satisfaction.
  • Ensures quality hiring, training, and succession planning processes that encompass the company's diversity commitment.
  • Mentors, provides guidance and leadership to the team and implements strategies to keep the staff motivated and engaged.
  • Participate in the property's sustainability initiative through energy conservation and the use of recycling programs and materials.
  • Performs all other job related duties as requested.

Required:

  • At least 5 years' previous experience in a high volume bar environment.
  • At least 5 years' of experience in bartending.
  • At least 3 years' experience with beverage menu creation.
  • At least 1 year supervisory experience.
  • Excellent knowledge of all beverage products, menu items and equipment used to perform these duties.
  • Excellent customer service skills.
  • Able to lead and mentor a team.
  • Have interpersonal skill to deal effectively with all business contacts.
  • Professional appearance and demeanor.
  • Work varied shifts, including weekends and holidays.
  • High school diploma or equivalent.
  • Working knowledge of POS systems.
  • Working knowledge of Excel, Outlook, PowerPoint, and Word.
  • Able to effectively communicate in English, in both written and oral forms.

Preferred:

  • Bachelor Degree in a related field.
  • Experience managing employees using a Collective Bargaining Agreement.
  • Certifications in Mixology/Spirits/Beer/Wine programs and or seminars.
  • Previous experience working in a similar resort setting.
