- Sweep and mop kitchen floors, scrub walls and trashcans, pick up trash in assigned areas and clean floor mats.
- Dismantle stoves, ovens, grills, and broilers on a daily basis or as required by departmental procedures.
- Clean and sanitize pots, pans, utensils and other kitchen equipment remaining from dinner service in accordance to departmental standards.
- Clean and wipe down designated equipment, machinery, walls, sinks, shelves, counters and storage boxes following specified cleaning instructions and safety precautions.
- Transport garbage containers from Kitchen and work areas to dumpster; empty and clean according to standards.
- Scrape each item with a wire brush and applies cleaning solution, cleaning ventilation units inside and out.
- Maintain written record of all equipment cleaned and/or those needing special attention.
- Disassemble and reassemble machinery for cleaning purposes
- Stock assigned items in storage and outlets.
- Adhere to strict services standards and follow established service sequences.
- Maintain complete knowledge of and comply with all departmental policies, procedures and standards.
- Maintain complete knowledge of correct maintenance and use of equipment.
- Use correct cleaning chemicals for designated items, according to OSHA regulations and hotel requirements.
- Check all sink drains and empty food particles.
- Clean all surfaces of ovens, grills, hot line burners, hoods/filters, deep fat fryers, steam kettles, steam tables, warming trays, broilers in accordance with departmental standards.
- Clean, wipe down and polish stainless steel surfaces in designated areas according to specifications.
- Remove grease from grease trap and clean to standards.
- Use designated chemicals, supplies and equipment to clean various floor surfaces (brooms, mops, stripper, buffer, etc.).
- Remove all debris from floor drains and clean with specified chemicals.
- Clean garbage compactor room and all surfaces according to departmental procedures; check deodorizer level and report substandard levels.
- Maintain cleanliness and organization of supply/storage closets; remove trash, wipe down shelves/counters; clean floors; remove items which do not belong and place in correct area.
- Clean designated equipment, sinks refrigerators/freezers, service areas, walls, floors, Kitchen/ Employee Dining Room/Dumpster/Compactor areas as assigned, following all sanitation requirements.
- Handle all wares carefully to prevent breakage and loss.
- Stock kitchen lines, restaurant service areas and buffet line with designated cleaned wares, utensils and equipment.
- Fill the dishwashing machine with specified amounts of designated chemicals, ensuring the temperature level of each cycle is set to standard.
- Organize the breakdown area for drop off of dirty wares.
- Remove excess food, debris and film from soiled wares before placing them in the dishwashing machine.
- Position wares in designated racks correctly and send through dishwashing machine only when full.
- Clean only designated wares in the dishwashing machine.
- Remove washed wares from dishwashing machine and allow to air dry.
- Change dishwashing machine water/filters and refill as specified to ensure all wares are properly cleaned.
- Monitor usage of dishwashing machine and chemicals to maximize consumption of water and chemicals.
- Check the working condition of equipment and machinery in accordance with specifications.
- Inspect the cleanliness and condition of all washed equipment and areas; re-clean items not meeting standards.
- Store cleaned equipment in designated areas.
- Monitor usage of chemicals to maximize consumption.
- Maintain cleanliness and organization of work areas throughout shift.
- Clean spills in kitchen and work areas immediately.
- Transport mats to the loading dock and clean.
- Report any damages, maintenance problems or safety hazards to the supervisor.
- Adhere to all Health Department, sanitation and safety regulations as required by the hotel.
- Organize and restock work areas for next shift.
- Perform all other job related duties as requested.
Required:
- At least 1 year of kitchen worker experience.
- Working knowledge of all cleaning equipment.
- Excellent customer service skills.
- Have interpersonal skills to deal effectively with all business contacts.
- Professional appearance and demeanor.
- Work varied shifts, including weekends and holidays.
- High School diploma or equivalent.
- Able to effectively communicate in English, in both written and oral forms.
Preferred:
- Previous experience working in a similar resort setting.
