DUTIES & RESPONSIBILITIES FOR PASTRY SOUS CHEF:

- Assists the Executive Chef in the daily activities of the kitchen, including menu development, inventory and purchasing of supplies, and cost control.

- Meet with the Executive Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance.

- Responsible for the production and presentation of cakes, pastries and other baked goods. Prepare extraordinary bakery menu items according to set recipes and specifications which will delight our Guests with their taste and unique presentation

- Oversees the activities of the pastry staff in the absence of the Executive Chef.

- Prepare a wide variety of goods such as cakes, doughnuts, cookies, muffins, viennoiserie, bread etc. following both traditional and modern recipes

- Finish and plate pastries with consistency and per established specifications

- Update production schedules, recipe cards, and plating guides as directed by the Executive Chef

- Assist with team member training and product awareness

- Set up workstations with all needed ingredients and cooking/baking equipment; Check production schedule and par plus establish priority items for the day

- Assist Executive Chef in preparing items for Guests with special dietary needs

- Keep a sanitized and orderly environment in the kitchen; Follow sanitation policies at all times

- Ensure all food and other items are stored properly

- Check quality of ingredients and monitoring of stock

Requirements

Job Requirements
QUALIFICATIONS & REQUIRED EXPERIENCE FOR PASTRY SOUS CHEF:

- At least 5-6 years of experience in a high-volume bakery/culinary environment

- At least 3 years previous supervisory experience with organizing and scheduling employees to maximize efficiency.

- Extensive and proven knowledge/experience in all aspects of the bakery operation: techniques & tools, scaling, proofing, decorating and finishing as well measurements, ingredients, equipment and smallwares required for a bakery setting

- Proven knowledge of HACCP (Hazard Analysis & Critical Control Points) as well as proper food handling techniques/temperatures

- Ability to effectively communicate in English, in both written and oral forms; Ability to read safety procedures, and operating guidelines & instructions in English

- Excellent customer service skills and the ability to lead and mentor a team.

- Ability to safely lift up to 50 pounds and to walk/stand for long durations

- Ability to work varied hours including scheduled hours, weekdays, weekends, and holidays
