This position will require 2 years experience in the following: 1. Prepares food items according to specifications, utilizing recipes and paying close attention to visual appeal; ensure proper production of food items by working efficiently to achieve maximum productivity. 2. Does Ordering of product to complete catering orders, Production sheets, Prep Lists, and administers daily inventory sheets to employees that they supervise. 3. Proficient in cooking and Teaching cooking methods such as broiling, grilling, saut ing, frying and poaching. Practice basic knife techniques and identify different cuts. 4. Certified in basic sanitation, food rotation, cooler cleanliness and basic kitchen etiquette. Is labeling, dating and storing all items within guidelines of kitchen plan. 5. Assigns and delegates work to be done to maintain fully stocked working station at all times. 6. Delegates preparation to all cooks what Soups, Sauces, vegetables and meats need to be produced by shift. Is proficient at standard to cook meat to order, is able to determine food temperatures, as it relates to proper temperature. 7. Proficient in safe and proper use of equipment at all times. Teaches and adheres to all processes to instruct new and existing employees on all kitchen set-up and break down tasks. Assigns cleaning schedules to Kitchen Stewards and cooks. 8. Comply with health department standards, upholding these regulations at all times. Does weekly walk throughs with Stewarding, Supervisors and Kitchen Sanitation management. 9. Delegates and Assigns the set-up and breakdown of Plating lines, including stocking of plates and various food items, maintaining cleanliness at all times. Assigns with all cooks and stewards all organization of kitchen coolers, shelves and dry storage to make sure right levels of food and staples are readily available. Fills out requisitions and short lists as needed. 10. Delegates and assists in daily preparation and production charts as it relates to business for the day, Week, Month.
