Culinary and Product Development Manager, Global Licensing

Position Summary 

Engage existing suppliers or identify and qualify new manufacturers and suppliers of proprietary food products and ingredients for international Shake Shack restaurants. Maintain and support food safety, food integrity, and quality standards.   Fully develop or enhance products and ingredients that may be core to the menu or in support of limited time offers or collaborations. Position will support the opening of markets that are new to Shake Shack or already existing markets. Will also liaise and work closely with domestic US based, Culinary, R/D, and QA teams and maintain final recipes for each market.

Essential Functions

  • Product development in a manufacturing environment focusing on technical, food science, and culinary or organoleptic attributes.
  • Support the Shake Shack Quality Assurance and Food Safety strategy and policies through a working knowledge of food science and GMP.
  • Heavy focus on the marketing culinary needs of our business, an understanding of culinary trends, is tuned into what is happening in the culinary world and has a real interest in furthering Shake Shack’s unique position as being a culinary trendsetter. 
  • Responsible for final recipes for each country. Manage the variations between the control (USA Recipe), and the approved variations by country.
  • Extensive international travel to suppliers and restaurants.
  • Understand all aspects of our food from a technical, performance, and qualitative perspective and translate into a manufacturing environment to develop a global network of suppliers.
  • Manage 3rd party audit program, qualify new suppliers and insure on-going quality of existing suppliers, manage product failure process, liaise between SSE Quality Assurance and Food Safety and international suppliers and partners, assist in new product development, audit Partner Supplier.
  • Knowledge of culinary trends and ability to understand culinary trends and culinary impactors in various markets to establish relationships, partnerships and collaborations.

Skills & Knowledge:

  • Culinary Arts Degree, Food Science Degree
  • Ability to work in fluid environment and across multiple cultures
  • Word, Excel, Power Point, & project management software knowledge

Experience:

  • Minimum of three years in an R/D or food production role
  • Experienced in working with commercialized formulas
  • Experienced traveler
