Position: Culinary Services Director
Location: Chateau at Valley Center - 4450 Davis Avenue South, Renton, WA 98055

The Culinary Services Director is responsible for the daily operation of the kitchen and dining rooms, including but not limited to: department financial performance, overall food & service quality and adherence to all applicable regulations.
Knowledge, Skills, and Abilities:
A? Culinary school diploma or equivalent experience
A? Minimum of 5 years cooking and/or restaurant experience
A? Minimum of 2 years supervisory experience
A? Broad knowledge of food service principals and restaurant operations
A? Extensive knowledge of sanitary procedures and regulations relating to food handling and safety
A? Ability to effectively read, write and verbally communicate in English
A? Ability to lift 40+ pounds and stand for three hours at a time
A? Basic computer skills
A? Possess a calm, pleasant and polite demeanor
A? Possess good judgment, problem solving and decision making skills
A? Current Food Handler's Permit
A? NRA Serv-Safe certification or equivalent within six-months of hire
A? Maintain a neat, clean and professional appearance at all times
A? Be willing to learn, take directions from supervisors and accept new responsibilities
A? Fundamentals, Dementia, and Mental Health
A? Valid CPR and First Aid
Reports to Executive Director and Shared Services Culinary Director
Salaried/Supervisory/Exempt
Area of Responsibility:
A? Recruit, hire, supervise, train and coach kitchen and dining room personnel
A? Key employees such as cooks and lead service personnel are hired in consultation with the ED and SSCSD
A? Maintain Chateau food quality standards by overseeing the preparation and service of all food items
A? Meet or surpass departmental budgetary goals by:
A? Preparing food and supply orders to insure adequate product is available and budget standards are met
A? Minimizing waste and utilizing leftovers
A? Ordering all food and supplies only from approved vendors
A? Conducting a monthly inventory of food products on hand
A? Preparing and implementing work schedules to provide quality service while controlling labor costs and overtime
A? Insure compliance with regulations regarding the preparation, handling, storing, and receiving of food products
A? Adhere to established menus, recipes and company foodservice policies
A? Maintain the cleanliness of equipment and all kitchen preparation areas by preparing and implementing cleaning schedules and side-work duties
A? Maintain an ongoing job training program for employees including culinary skills, safety, sanitation, service or other applicable topics relating to the Culinary Services Department
A? Keep required administrative and food service records
A? Plan menus, oversee production and service of catered or special events
A? Assist in the development of the departmental budget
A? Participate in the development of cyclical menus and foodservice policies as a member of the company foodservice team
A? Provides a presence of authority and accountability to staff, residents and families
A? Other duties as assigned by the Executive Director or SSCSD
