The primary role of the Bistro Manager is to maximize the profit potential of all areas of food & beverage services by assuring the highest level of guest satisfaction possible. This is done through excellent leadership skills, active and ongoing engagement with guests, establishing, maintaining & training all service standards & systems, driving revenues, controlling costs, and genuinely striving to assure that every guesta??s experience is exceptional. The Bistro Manager supervises all areas of the Bistro team in the day to day operations of the restaurant to achieve financial and organizational goals as directed by PRO Senior Management as communicated by the Sr. Director of Special Services. In addition to the primary role, other supervisory or direct responsibilities include but are not limited to, labor management, product cost management, quality control, health and safety, hiring, training and coaching of all Bistro cast members. Adherence to PROa??s Guest Promise and Service Vision is a fundamental requirement of all Cast Members.
ESSENTIAL JOB FUNCTIONS
Assure the highest level of guest satisfaction possible
  • Establish and maintain a culture of regularly engaging with all guests. This includes table touching during all meal periods and getting to know the names and preferences of as many guests as possible
  • Establish, maintain and train all service standards & systems in accordance with PRO standards
  • Assure that all service staff adheres to the same engagement expectations as defined above.
  • Refine and maintain all cycles of service as defined by senior PRO leadership
  • Assures that all cast are actively following the cycles of service
  • Drive the process of quarterly menu engineering by keeping abreast of current trends, monitoring menu mix reports, and providing the leadership necessary for the kitchen management to execute upon desired outcomes
  • Provide regular and ongoing product sampling to guests as a gesture of appreciation
  • Understand, expect and follow through with excellent service recovery practices
Achieve sales & cost goals
  • Work with the marketing department to create regular marketing promotions and execute effectively on those promotions
  • Continually measure the effect of promotions through reporting tools available in order to properly position future campaigns and target effectively
  • Work with marketing in updating printed menus, posted specials, website news and Bistro-specific digital signage used throughout PRO
  • Lead the Bistro team in developing in-house sales contests & strategies
  • Have thorough and active knowledge of departmental financial statements and expected controls in order to effectively contain costs and measure revenue gains
  • Direct monthly product inventories and participate as needed
Assure adherence to portion standards
  • Assure that all assets and inventories are sufficiently secured to prevent theft and destruction
  • Follow and direct the adherence to all PRO administrative processes and procedures
  • Lead the process and use of costed labor schedules. Monitor daily staffing levels in relation to current business volume
Assure that all product quality control standards are adhered to at all times
  • Assure that all food and beverages delivered to guest are of the high quality standards approved by senior management
  • Establish, manage and conduct daily quality control checks and guidelines
  • Quickly and effectively follow up on any negative quality issues
  • Establish, manage and conduct monthly and daily facility walkthroughs and follow up on defects in an expedient manner
Hiring & Training
  • Adhere to PROa??s service aptitude and appearance standards when recruiting and hiring
  • Expect these same standards when allowing other Food & Beverage Management Team members to hire
  • Actively participate in interviewing, hiring & reviewing of all food & beverage cast members
  • Ensure all cast members are properly trained in Bistro service, quality and timing standards
  • Assure that all Food & Beverage Management Team members conduct monthly staff meetings and daily warm ups. Attend as many of these meetings as possible
  • Conduct weekly Food & Beverage Management Team meetings to discuss current special events, weekly menus, financial performance and all other outstanding business
  • Understands, establishes and adheres to all skill-based pay standards for the Food & Beverage departments
  • Promote teamwork as a way of life at PRO
  • Assures that all training, procedures and recipe resources are kept up to date and available to all Food & Beverage staff on PRO Gateway (company intranet)
Maintains a safe & secure environment for all cast and guests
  • Ensure all Serve Safe practices are trained and followed
  • Ensure all restaurant equipment in proper working order
  • Assure that all cash handling controls are followed without exception
  • Monitors and assure that all Food Workera??s Permits and Mandatory Alcohol Server Training (MAST) Permits are current for all Bistro service cast
EDUCATION AND EXPERIENCE
  • Minimum of two years working in a high volume, full service dining environment
  • At least one year experience working in a fast paced casual dining environment
  • At least two years management experience
  • Demonstrated experience in development of management staff
  • Must have current food handlers permit
  • Serve Safe Certification a plus
  • Minimum local travel may be required
  • Valid Drivera??s License required
  • Current CPR Certification required (From either Red Cross or American Heart Association) a?? or must be able to get within 30 days of employment
