Job Description:

This position will have primary responsibility for the successful development and planning of all aspects of the culinary operation, including all food menus, specialty menus and events, culinary operating procedures and delivery standards, and presentations within corporate guidelines. Execution of all operational aspects of establishing a successful culinary operation for the project.

Essential Duties

  • Have primary responsibility for the development of all food & beverage programming, alongside and under the direction of the Food & Beverage Director and Corporate Chef.
  • Development of Standard Operating & Service procedures for the kitchen and food & beverage purchasing in collaboration with Purchasing Manager, Director of Food & Beverage and corporate team.
  • Establishes and assure implementation of cleaning and sanitation procedures for kitchens, and food storage areas. Assures that local and state requirements are met with regards to food handling permits, and other health department requirements.
  • Oversees all aspects of training and orientation for B Ocean Resort culinary team.
  • Assists in public relations efforts with respect to the Food & Beverage and Culinary operation.
  • Provides highly visible, hands-on and inspirational leadership to the culinary team.
  • Develops innovative and creative menus and concepts to maximize profitability and achieve guest satisfaction.
  • Oversees all aspects of the day-to-day operation of the culinary department, including cleanliness & sanitation, inventory control, par stock management and food cost.
  • Responsible for successful passing of all F&B related Health Department inspections, protecting guests, staff members and B Ocean Resort from potential illness and negative publicity.
  • Responsible for working with the Food & Beverage Director in terms of growing existing business volumes and generating new business to ensure that food & beverage revenues meet or exceed immediate and long term needs and maximize departmental performance.
  • Maintains the highest levels of service and product quality with exceptional guest service satisfaction.
  • Stays current with new trends in food & beverage product development, changes in market conditions, and guest demands.
  • Actively represents B Ocean Resort to the community (civic, service and professional groups) and industry professionals in a manner that enhances B Ocean Resort reputation and gains recognition for the B brand.
  • Monitors performance of individual culinary staff and takes supportive and corrective action when needed.
  • Responsible for the selection, hiring, training and supervision of all culinary staff members.
  • Builds and maintains highly interactive, service-oriented business relationships with the B Ocean Resort guests, staff, and suppliers.
  • Develops and maintains open and engaging relationships with other revenue generating departments.
  • Creates budgets and forecast, monthly and annually. Analyzes and takes responsibility for the financial performance of the department.
  • Manage time and attendance and payroll records and processes.
  • Oversees Stewarding department, but not limited to recruitment, training, scheduling, conducting counseling and evaluations and delivering recognition and reward.

Job Requirements

  • At least 2 years of Culinary Management experience in a full-service, structured dining/banquet establishment. Hospitality environment preferred.
  • Excellent communicator both written and verbal.
  • Results driven, well organized and detail oriented.
  • Proven successful track record of developing and managing 5-star culinary operations.
  • Well versed in all aspects of discreetly catering to the highest demands of high profile celebrities and powerful corporate clients.
  • Experienced in developing and implementing quality assurance programs of the highest level.
  • Outstanding team leader; builds and motivates a cohesive team.
  • Must be able to maintain a flexible work schedule, including evenings, nights and weekends.
  • Self-directed, loves challenges, upbeat and outgoing.
  • Calm and courteous in demanding situations, must enjoy working with people.
  • Enthusiastically embraces and exemplifies B Ocean Resort mission.
  • Participative, hands-on approach.
  • Proficiency with computers and computer programs, including Microsoft Word, Excel and Outlook.
