The Cook position prepares, seasons, and cooks soups, meats, vegetables, desserts or other food items to restaurant quality. High volume, fast paced hospital kitchen environment.

ESSENTIAL DUTIES:

  • Prepares food as indicated by par level sheets and in accordance with both Nutritional Services and Health Department standards.

  • Ability to work independently with very little oversight.

  • Review the needs of the day with assigned supervisor(s).

  • Is responsible for quantity and quality control in food production as well as overall sanitation of assigned area.

  • Participates in daily temperature and taste panels to assure quality and provide suggestions for continuous improvements.

  • Follows standardized recipes to meet nutritional needs.

  • Expertise to record all portions produced and any waste.

  • Attractively presents all items with appropriate garnish and correct portion size.

  • Follows all HACCP protocol, temp logs, and sanitation logs.

  • Inspect food preparation and serving areas to ensure quality presentation and sanitation.

  • Conduct taste panel on all foods before serving.

  • May be required to place orders or check in freight.

  • Neat and clean personal appearance.

  • Follows dress code according to departments policies.

  • May assist other food service personnel.

  • Actively supports and participates in performance improvement activities.

  • Assists coworkers during staffing shortages.

  • Provides back-up assistance for dish room and patient tray assembly.

  • Performs other duties as assigned by the Management Team.

  • Other related duties may also be assigned.

Qualifications

THIS POSITION REQUIRES:

  • High school diploma or GED equivalent.

  • Alaska Food Workers Card or ServSafe Certification.

  • Minimum two (2) years of work experience or documented vocational training sufficient to demonstrate a knowledge of cleaning equipment, food preparation, and general cleaning processes or a suitability for this type of work.

  • Minimum three (3) years of related work experience in the food service industry.

  • Demonstrate ability to portion all foods properly and ensure that proper yields are obtained.

  • Must pass a fingerprinting background investigation that complies with The Crime Control Act, Child Care Worker Act and the Indian Child Protection and Family Violence Prevention Act.

  • Must be fluent in speaking, reading, and writing English.

PREFERRED:

  • Certain positions require a valid Driver s License and an acceptable driving record for the past three (3) years to be eligible under NMS vehicle insurance policy.

  • Proficient in using the following equipment: Calculator, steam tables, coffee machines, dish machine, trash carts, knives, ovens, writing utensils, slicers, blenders, mixers, steam ovens, grill, grinder, fryer, broiler, hot tops fat fryer, counter mixer, roasting ovens and kettle.

  • Able to follow standardized written recipes.

  • Knowledge/training of usage of food production equipment.
