  • Il Palio restaurant in Chapel Hill, N. C. is searching for a sous chef to complement the successful kitchen team at The Siena Hotel.
  • Il Palio's sous chef position comes with a great deal of responsibility.
  • He/she will report directly to the Executive Chef, Teddy Diggs, and will assist in the management the kitchen staff.
  • The successful sous chef candidate will quickly develop an in-depth familiarity with the kitchen's operations and should quickly gain the confidence to fill in when and where they are needed on the line.

The right candidate will be organized and have a great attention to detail and the must possess the ability to quickly and authoritatively problem solve and delegate delegate. They must also be able to use their considerable experience as a resource to effectively coach and mentor junior chefs. The right candidate must strive for perfection while, at the same time, understanding that it is impossible to achieve. He/ She will find an opportunity for professional growth and development in an environment that believes communication and organization are the keys to running a successful kitchen.

A passion for Italian food and culture is preferred.

Il Palio is a James Beard recognized, AAA four diamond restaurant housed in the, 79 room, Siena Hotel which is a member of Marriott's Signature Collection. The kitchen serves breakfast, lunch, and dinner as well as serving to hotel room service, bar and custom banquets. We serve regional Italian classics as well as our own visions of Italian cooking and hospitality

As a Hotel Sous Chef, you must be a strong and effective leader, preferably one who has risen through the ranks of your career and has first-hand knowledge of staff duties and concerns. You must also be highly detail-oriented with a hands-on approach, and strong work ethic. It is also important that you have excellent verbal and written communication, and interpersonal skills.

Specific qualifications for the role include

  • Experience with kitchen systems and procedures
  • Ability to work every kitchen position as needed
  • ServSafe certification, a plus
