The Chef de Cuisine is responsible for planning, directing and controlling all areas of the restaurant unit to meet all quality, operational and financial responsibilities. This includes, but is not limited to food and labor cost, supervising, training and developing all Heart of the House (HoH) staff. Chef will also be responsible for executing all menu categories to include, but not limited to; quality, temperature, timing, proper portioning, food presentation and all food safety and sanitation requirements.


Responsibilities

  • Strict adherence to food quality and standards.
  • Establishes budgets for restaurant unit and ensure budget targets are met.
  • Ensures proper use of company programs to control food, labor and inventory cost.
  • Provides direction for all menu formation and implementation, food preparation and sanitation and safety practices.
  • Ensures all company training policies are met.
  • Ensures proper Brand training for all team members and management.
  • Administers and ensures compliance with all company and HR policies.
