Job #66656 Sodexo is seeking an Executive Chef (I) for Luther College In Decorah, Iowa . Luther is beautiful, undergraduate, private residential liberal arts college affiliated with the Lutheran Church and is located in the bluff country of Northeastern Iowa , nearest metro area is Minneapolis, MN. We have a robust dining program serving approximately 5000 meals per day across campus and featuring; local foods, cooking from scratch, sustainability, and a great sense of community which are just a few of the attributes of this unique place.
In this role you will function as a Sous Chef and report to the Senior Culinarian on Campus. Your responsible for ; assisting with the training and developing of 60 employees / students workers, food and labor cost controls, daily kitchen management, food production, catering execution, recipe standards, inventory, on-line purchasing, menu planning, food & kitchen safety, equipment maintenance, staff schedules, and our customer service programs.

Your Skills Check List for this position;
Culinary Degree / Trade School Certificate and Servsafe Certified
Campus Dining, Contract Food Service Management experience
Working knowledge of HACCP protocols for regulatory compliance
Food production, meal presentation, catering with attention to detail
Experience; inventory management & on-line ordering for 1M in volume
Financial skills for P&L reporting and budgeting
Skilled at creating and developing menus and pricing
Capable of training & developing hourly employees and student workers
Ability to manage multiple and at times, competing priorities
Computer skills; food & labor management systems, Menu Graphics
Training team members in food and kitchen safety with regular self-audits

Position Summary
Provides culinary leadership within a small sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution
Key Duties

-Customer & Client satisfaction
-Manages food & physical safety program.
Qualifications & Requirements
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
