Southland Park Gaming & Racing, owned and operated by Delaware North, features more than 1,900 video gaming machines, electronic blackjack tables, a poker room, live greyhound racing and simulcast wagering.  Southland Park is located in West Memphis, Arkansas, only a short drive from downtown Memphis, Tennessee.

The Opportunity

Effectively manage and assist employees including lead cooks in the preparation food items that are appetizing according to recipes and quality standards, in accordance with the Company’s GuestPath Universal Service Standards and applicable Operational Standards. Must be able to obtain an Arkansas Racing License.

Essential Functions:

  • Supervises all kitchen staff, including Cook IIIs
  • Assist in the training
  • Assist with scheduling of staff
  • Enforce all departmental and organizational policies and procedures
  • Prepares food to specifications before and during unit operations.
  • Properly measures and portions all food items. Complies with all portion sizes, quality standards, department rules, policies and procedures.
  • Cooks all food to proper specifications in a timely manner.
  • Utilizes kitchen equipment to prepare food items such as: knives, slicers, whips, pots, pans, warmers, steamers, grills, ovens, etc.
  • Ensures proper food temperatures are maintained and food is stored correctly.
  • Ensures freshness and quality of all menu items.
  • Performs opening, closing and side work duties as instructed and according proper guidelines.
  • Keeps workstation and equipment clean, organized, sanitized, and sufficiently stocked.
  • Follows and upholds all health codes and sanitation regulations.
  • Sets up and operates kitchen equipment
  • Maintain a safe work and customer environment
  • Monitor and order food products and supplies
  • Account for all food and labor costs
  • Perform inventory and food quality control measures
  • Maintain current knowledge of menu and products
  • Prioritize tasks, handles multiple projects simultaneously, organize and delegate assignments
  • Ability to utilize BirchStreet Procurement system
  • Conduct employee-counseling sessions including verbal and written corrective action reports
  • Provide leadership to others through example and sharing of knowledge and skill
  • Issues and addresses corrective counseling
  • Role model the GuestPath Universal Service Standards interacting positively through relationships with guests, coworkers, and supervisors displaying genuine concern and mutual respect for people’s needs
  • Greet customers positively, treating each person as an individual and in a professional manner
  • Demonstrate skill in dealing with customer complaints, using active listening skills to defuse difficult and sometimes emotionally charged situations to maintain the customer’s goodwill
  • Understand the goals and vision of the organization, and demonstrate commitment to those goals in terms of individual and team performance
  • Complete other duties as assigned

Experience Required:

  • Culinary Arts Degree, Certificate or Apprenticeship preferred
  • Minimum of 1 year- 3 years previous experience in back-of-the-house foodservice position preferred

Knowledge, Skills & Abilities:

  • Able to teach basic knife skills, cooking techniques and sanitation guidelines
  • Ability to read and understand recipes and food abbreviations.
  • Ability to communicate with others
  • Basic math skills including addition, subtraction, multiplication, division, fractions and percentages
  • Attentive and detailed oriented.
  • Capable of following procedures and taking directions.
  • Standing and walking 100% of time in a fast paced and busy environment
  • Ability to obtain ServeSafe Certification
  • Ability to obtain Arkansas Racing and Gaming Commission License

Physical Requirements & Environmental Working Conditions:

  • Kitchen environment – noise levels may be moderate to high
  • Works frequently in a hot and damp environment.
  • In contact with sharp knives, slicers, boiling liquids, hot pans, etc.
  • Hazards include, but are not limited to, cuts from broken glass, metal cans, scalds and burns, slipping and tripping.
  • Frequently immerses hands in water.
  • Exposure to 90-degree climate 100% of time
  • Ability to lift up to 50 pounds frequently
